I came up with the idea for this Cheesy Spaghetti Stuffed Meatloaf to go along with this week’s #SundaySupper theme of “Cheesy Family Dinners.” I wanted to make something that was a little unexpected, and something that was topped with a thick layer of melted cheese. The result is this very large family-friendly meatloaf that will feed the masses when everyone is gathered around the #SundaySupper table.
The inspiration for this recipe came to me because it was a play on the phrase “Spaghetti Western,” and I thought it would be fun. Once I had the idea in my head, the ingredient list for this Spaghetti Western Chili Casserole followed quickly.
I had a blast making this video even though I was really nervous going live. Luckily for me, I had my husband close by to help lend me the moral support I needed, and so I felt more comfortable in front of the camera.
As you’ll see in the photos and video, I made this Alfredo Ravioli Lasagna in a square-shaped springform pan. The reason I chose this pan is that I’ve had it in my cabinet, and have never (not once) used it. It’s not like I have a lot of unused pots and pans in my kitchen, but due to neglect and a fair bit of inorganization on my part (i.e., getting pushed to the back of the cabinet), my square springform pan was in need of some serious loving.
This hearty slow cooker chili mac recipe is one I’ve been making for many years, but I’ve not always made it in the slow cooker. It’s a recipe I remember my mom making when I was a kid, but I don’t recall hers having as much zippy flavor as this one does because I’m fairly certain mom didn’t use fire roasted chiles in hers.

Or, it can be a vegetarian lovers delight, and stand completely on its own.

Imagine if you will, deeply caramelized onions (cooked in a slow cooker) with red wine, butter, beef broth and thyme until they’re sweet and pungent. The onions are stuffed into large, perfectly cooked pasta shells until they’re practically overflowing. The stuffed shells are then layered on top of toasted, garlicky French bread, topped with an abundant mixture of grated Swiss, and Gruyere cheeses, and popped into the oven, so the cheese melts into a blanket of golden, gooey, goodness…Be still my French onion loving heart!
