Are you as excited as I am that it's finally asparagus season? I wait all year for the tasty green spears to come down in price so I can load them up in my shopping cart at the market.
Couscous with Feta and Asparagus is a fast and tasty side dish that takes only 10 minutes to make and pairs well with any protein. My favorite is lamb chops. Mmmmm.
One of my favorite omelets I get when we go out for breakfast is a Greek omelet with asparagus, feta, and lamb. It may sound like a weird combination for breakfast, but let me tell you, it's amazing!
This recipe for Couscous with Feta and Asparagus is my take on that Greek omelet but with the couscous standing in for the egg and with a bit of oregano and lemon zest. Similar but completely different. What can I say?
COUSCOUS WITH FETA AND ASPARAGUS {PRINT THIS RECIPE}
1 pound asparagus, trimmed and cut into 1" pieces
1 teaspoon grapeseed oil
2 tablespoon butter, divided
1½ teaspoon salt, divided
½ teaspoon black pepper, divided
2 cloves garlic, minced
2 cups beef broth (I use low-sodium)
2 cups couscous
2 cloves garlic, minced
1 teaspoon dried oregano
1 tablespoon lemon zest
2-3 ounces crumbled feta cheese
lemon slices as garnish (if desired)
-In a large stockpot bring the beef broth, 1 tablespoon butter, 1 teaspoon salt, and ¼ pepper to a boil over medium heat. Stir in the couscous. Cover and cook for 5 minutes. Remove from the heat, fluff with a fork, and set aside.
-In a large skillet over medium heat, saute the asparagus in the grapeseed oil and 1 tablespoon butter until crisp-tender (approximately 3 minutes). Stir in the garlic, ½ salt, ¼ pepper, and oregano. Cook for an additional 1-2 minutes.
-Stir the sauteed asparagus, lemon zest, and crumbled feta into the cooked couscous. Garnish with lemon slices if desired and serve.

I totally with you, I love asparagus season and probably eat my weight in it (well close) while it's here. This recipe is absolutely one of things I do on a regular basis with asparagus, you can't go wrong with couscous and feta!

Yes, Yes, Yes, I do love asparagus. I'm not a fan of feta, but I'm sure I could omit that. The rest of it looks delicious.
