I used my handy-dandy Spring Chef vegetable peeler to quickly and easily make a pile of fresh carrot shreds in no time flat.
What I like about this particular peeler is that you can shred carrots (or just about anything for that matter) by pushing and pulling the blade back and forth, slicing twice as much in half the time.
Plus, it's a fun and super rewarding way to shred carrots, considering that using a box grater is a real arm workout and takes forever. And while a food processor is fast, it's a pain to lug out, and there are too many parts to wash for a simple pile of shredded carrots.

It's a personal preference, but I prefer to take the time to remove them.
How to remove the strings from snow peas and sugar snap peas:
Use a paring knife to almost cut the tip off each end of the peas, but instead of cutting it off completely, make sure to snag the string as you cut and pull the string (much like a zipper) down the length of the pea, discarding the string.
How long will this chilled carrot salad stay fresh in the fridge?
Store this salad in an airtight container or in a bowl covered well with plastic wrap, and it will stay fresh and crispy for up to 7 days.
What is the best peanut butter to use in this chilled Asian-inspired veggie salad?
I used a standard peanut butter because that's what I typically have on hand in my pantry. Feel free to use whatever peanut butter you like best. All-natural, no-sugar added, organic, creamy or crunchy...the choice is yours!
Can other nut butters be used to make this salad?
You bet.
Here are a few alternative suggestions if you'd prefer not to use peanut butter: Sunflower Seed Butter, Almond Butter, Pistachio Butter, Walnut Butter, Cashew Butter, Hazelnut Butter, and Tahini, which is sesame seed butter.

Can rice wine vinegar be used in place of champagne vinegar?
Yes, it sure can, and it's actually preferred if you have it on hand.
In all honesty, when I was shooting the video for this recipe, you'll hear me say I thought I had rice wine vinegar in my pantry, but I didn't.
I chose to use champagne vinegar as a replacement for the rice vinegar, and the completed carrot salad still tasted amazing!
Can pre-shredded grocery store carrots be used in this salad?
Yes. Keep in mind that you'll need approximately 3 cups of shredded carrots.

Can this carrot salad be frozen?
I don't recommend it because as it thaws the crisp texture of the carrots and snow peas will become soft and mushy.
How long will this recipe take from start to finish?
Not long at all. Since there is no cooking involved, this recipe will come together in less than 15 minutes.
However, it's best to let it chill in the refrigerator for at least 4 hours before serving.

Asian Carrot Salad with Snow Peas
Equipment
Ingredients
- 3 cups (approximately 4 medium carrots) shredded carrots outer peels removed and discarded
- 2 cups snow peas strings removed (optional)
- ½ cup chopped scallions plus additional for garnish (optional)
- 1½ teaspoon kosher salt
- ¾ teaspoon black pepper
- ½ cup peanut butter your favorite variety
- ¼ cup light brown sugar
- 1 tablespoon champagne vinegar or rice wine vinegar
- 1 tablespoon (approximately 2 limes) fresh lime juice or to taste
- 1 teaspoon lime zest
- 3 tablespoons low-sodium soy sauce
- ¾ teaspoon ground coriander
- 1 tablespoon peanut oil or other neutral flavored oil
- 2 tablespoons water to thin the dressing as needed
- 1 tablespoon honey optional, as a final touch
- 1 tablespoon chopped peanuts optional, for garnish
Instructions
For the vegetables:
- Add the shredded carrots, prepared snow peas, chopped scallions, salt and pepper to a large bowl. Toss to combine.Set aside.
To make the dressing:
- Add the peanut butter, brown sugar, lime juice, and vinegar to a medium-size microwave-safe bowl. Microwave on high for 45-50 seconds to loosen the peanut butter for easier stirring.
- Stir (or whisk) the oil, lime zest, ground coriander, soy sauce and water (see note below) into the peanut butter mixture until creamy and pourable. *Note - you may add more or less water to the peanut butter mixture depending on how thick (or thin) you prefer the consistency of the dressing.
- Pour the dressing over the carrots, snow peas, and scallions and stir well to combine.
- Cover and refrigerate for at least 4 hours before serving.
- Drizzle the salad with honey and top with additional scallions and chopped peanuts (optional) before serving. Best serve chilled.
