When I learned that this weeks #SundaySupper theme is orzo pasta, I jumped at the opportunity to develop this light and refreshing new dish.
Orzo is probably one of my favorite kinds of pasta. The shape is so tiny and compact that it works well as a filling for a stuffed dish like this Elegant Orzo, Shrimp & Vegetable Salad Stuffed Avocado.
This dish for Authentic German Spaetzle Casserole was inspired by a recent trip to Germany my husband, and I was lucky enough to take onboard a Vantage River cruise ship (The River Voyager) down the Rhine River, on one of their culinary excursions. When I tell you it was a dream-trip come true, I am 100% NOT exaggerating!!

The result is this very large family-friendly meatloaf that will feed the masses when everyone is gathered around the #SundaySupper table.
I’m sharing this recipe for Christmas Pasta with Red & Green Bell Peppers as a recipe re-do. The original post was one I’d published in December of 2012, but it’s now time for some updated pictures. Below is the original photo from the post back in 2012. As you can see, it was in dire need of an update! The recipe stayed the same, but the photos (thankfully), haven’t.
The inspiration for this recipe came to me because it was a play on the phrase “Spaghetti Western,” and I thought it would be fun. Once I had the idea in my head, the ingredient list for this Spaghetti Western Chili Casserole followed quickly.
I had a blast making this video even though I was really nervous going live. Luckily for me, I had my husband close by to help lend me the moral support I needed, and so I felt more comfortable in front of the camera.
As you’ll see in the photos and video, I made this Alfredo Ravioli Lasagna in a square-shaped springform pan. The reason I chose this pan is that I’ve had it in my cabinet, and have never (not once) used it. It’s not like I have a lot of unused pots and pans in my kitchen, but due to neglect and a fair bit of inorganization on my part (i.e., getting pushed to the back of the cabinet), my square springform pan was in need of some serious loving.
My neighbor came over to my house one day in mid-August with a bag of corn on the cob she’d brought me from Wisconsin. What a treat! I thanked her profusely for the unexpected gift and stuck them in my fridge knowing that I’d use them for something soon. Days passed, and I still hadn’t used them…
