I’m sharing this recipe for Christmas Pasta with Red & Green Bell Peppers as a recipe re-do. The original post was one I’d published in December of 2012, but it’s now time for some updated pictures. Below is the original photo from the post back in 2012. As you can see, it was in dire need of an update! The recipe stayed the same, but the photos (thankfully), haven’t.
The inspiration for this recipe came to me because it was a play on the phrase “Spaghetti Western,” and I thought it would be fun. Once I had the idea in my head, the ingredient list for this Spaghetti Western Chili Casserole followed quickly.
I had a blast making this video even though I was really nervous going live. Luckily for me, I had my husband close by to help lend me the moral support I needed, and so I felt more comfortable in front of the camera.
As you’ll see in the photos and video, I made this Alfredo Ravioli Lasagna in a square-shaped springform pan. The reason I chose this pan is that I’ve had it in my cabinet, and have never (not once) used it. It’s not like I have a lot of unused pots and pans in my kitchen, but due to neglect and a fair bit of inorganization on my part (i.e., getting pushed to the back of the cabinet), my square springform pan was in need of some serious loving.
My neighbor came over to my house one day in mid-August with a bag of corn on the cob she’d brought me from Wisconsin. What a treat! I thanked her profusely for the unexpected gift and stuck them in my fridge knowing that I’d use them for something soon. Days passed, and I still hadn’t used them…
This hearty slow cooker chili mac recipe is one I’ve been making for many years, but I’ve not always made it in the slow cooker. It’s a recipe I remember my mom making when I was a kid, but I don’t recall hers having as much zippy flavor as this one does because I’m fairly certain mom didn’t use fire roasted chiles in hers.
This week the five main courses we’re bringing you for your weekly meal planning consideration are; Greek yogurt grilled chicken, a Havarti onion burger, fish tacos, cilantro Thai chicken, and an amazing zucchini pancetta pasta.
The three bonus recipes for your weekly meal planning consideration are; a snack of peanut butter energy bites, a side dish of an avocado hollandaise sauce over roasted asparagus, and a dessert of lemon raspberry cobber cupcakes.
The thing I like most about this recipe (other than all the CHEESE), is how easy it is to make this recipe on a busy weeknight. By cooking the pasta while the vegetables are sauteing and the cheese sauce thickens, this Pepperoni Pizza Macaroni & Cheese can be on the dinner table in less time than it takes to order from your favorite take-out place.
What goes better with a backyard BBQ or party in the warm weather than a chilled pasta salad? Not much in my book. This recipe for chilled Surprise Orzo Pasta Salad with Sweet Corn and Blueberries is the perfect accompaniment for any kind protein. Or, it can be a vegetarian lovers delight, and stand completely on its own.
This dish of caramelized seared scallops comes together quickly and with only a small handful of ingredients. And, with only a large high sided saute pan this recipe can easily be made as a one pot wonder.
