Basic ingredient information:
LARGE CROISSANTS - I used croissants that I purchased from Costco. They're large, delicious, and incredibly flaky. Feel free to use your favorite brand of croissants (or even make your own if you're so inclined). *Important note -this recipe is NOT intended for pre-baked crescent rolls that come in the pop tube (you know the ones).
LARGE EGGS - You will need two eggs per sandwich. Room-temperature eggs whisk together easier than cold eggs right out of the fridge. Allow your eggs to sit on the counter at room temperature for 30 minutes, or run them under warm water for 2 minutes to bring them to room temperature quickly.
BUTTER - I always use salted butter, but you can use unsalted butter if that's what you prefer for your eggs. Melt the butter in the microwave (one tablespoon melted butter per sandwich) and allow the melted butter to cool slightly before adding it to the whisked eggs.
MILK - This ingredient is optional, but I like adding a splash of milk to my eggs for additional richness. I used 2% milk, but any variety of milk will work (except sweetened almond or nut milk).
SALT AND PEPPER - Kosher salt and freshly cracked black pepper are always the seasonings I use. If you use iodized table salt for this recipe, please refer to the gray box below.
*Important Note—If using table salt instead of kosher salt, please cut back on the amount of salt called for in the recipe card by half because they measure differently due to grain size.
Necessary kitchen tools and equipment:
- Air Fryer (or conventional oven) - These delicious egg-filled croissant breakfast sandwiches can be made in either an air fryer or oven. They'll cook quicker and crispier in an air fryer, but a conventional oven works too. For the air fryer, you'll need to cook the sandwiches at 350 degrees F (175 degrees C) for approximately 10-12 minutes, and for a conventional oven, you need to preheat the oven to 375 degrees F (190 degrees C) and cook them for approximately 20-22 minutes.
- Serrated Knife - Since croissants are flaky and delicate, a serrated knife works best. Use a light sawing motion with the Knife to gently remove the top ⅓ of the bun.
- Cutting Board
- Mixing Bowls - I like to use small ones as prep bowls with all my add-in ingredients.
- Whisk - A fork will also work for blending eggs, but I love my trusty whisk.
- Chef's Knife - Used for chopping any additional fillings you may use in your sandwich. You can find a list of suggestions and options below, but feel free to devise your own concoction.
- Box Grater - grated cheese works best for these egg sandwiches. Feel free to use pre-shredded cheese from the store, but because it gets coated with an anti-caking agent, it won't melt as nicely as cheese grated from the block.
- Spatula - Used to make removing the egg sandwich from the tray easier before serving.
- Oven gloves - Once you reach for the air fryer baking sheet without one, you'll thank me. As a reminder, this is not a microwave; cooking utensils and equipment get HOT (I speak from experience here)!!
- Glass Measuring Cup - I often use my 4-cup glass Pyrex measuring cup as a bowl. It's microwave-safe, and that little pour spout is handy for many things.
- Parchment Paper - Anytime I can use parchment paper to help make cleanup more manageable, I'm all for it. This is optional, of course, but I recommend using it because sometimes some of the uncooked eggs will escape before fully setting in the sandwich.
- Baking Sheet - Whether cooking these egg-filled croissant sandwiches in the air fryer or oven, you'll need a properly sized baking sheet for whatever appliance you use.

- Diced ham, cut into small pieces
- Cooked breakfast sausage, cut into small pieces
- Assorted cheeses, grated or shredded
- Spinach, frozen (thawed and drained) or fresh, chopped into small pieces

- Pre-cooked and shredded hash browns
- Mushrooms, chopped into small pieces
How many eggs are used per croissant breakfast sandwich?
I wrote the recipe using two large eggs for each sandwich. However, if you'd like to use one or even three eggs (depending on how eggy you'd like), feel free to do so and limit or omit the filling extras.
Can croissant egg sandwiches be cooked in a conventional oven?
They sure can, but be aware that they will take longer to cook at a higher temperature and won't become as deep brown or flaky as when cooked in an air fryer.

Air Fryer Croissant and Egg Breakfast Sandwich
Equipment

Ingredients
- 4 large eggs 2 eggs per sandwich
- 2 large (bakery- sized) croissants not pop tube crescent rolls
- 2 tablespoons milk 1 tablespoon per sandwich
- 2 tablespoons butter, melted and cooled 1 tablespoon per sandwich
Assorted mix-ins for your consideration (per sandwich):
- 1 tablespoon shredded cheese (your favorite variety)
- 1 tablespoon pre-cooked breakfast meat chopped into small pieces
- 2 tablespoons assorted vegetables, optional your favorites, chopped into small pieces
Instructions
- Use a serrated knife to gently cut off the top ⅓ of the croissant. Feel free to save the top piece for another purpose, or as a snack.
- Gently hollow out the interior of the base of the croissant to make room for the filling, being very careful not to break any holes in the croissant, or make the walls too thin. Set the prepared croissant/croissants aside on a air fryer-sized baking sheet that is compatible with your machine.
- In a medium-sized bowl, whisk together 2 eggs (per sandwich), 1 tablespoon milk, and 1 tablespoon melted and cooled butter, along with the fillings of your choice.
- Carefully and slowly spoon (or pour) the beaten eggs and filling into the center of each prepared croissant, taking your time as the eggs gradually work their way fully into the croissant.
- Preheat air fryer to 350 degrees F (175 degrees C) for 2-3 minutes.
- Bake the egg filled croissant in the preheated air fryer for 10-12 minutes rotating the sandwiches halfway through the process for even cooking. Carefully remove the sandwiches after cooking and serve hot.
