Maybe you wouldn't expect delicious Breakfast Burritos to come out of an air fryer, but I'm here to show you just how easy they are to make with just a few simple steps.

Everything you love about the flavor of a scrambled egg breakfast burrito can now be made in an air fryer.
Flour tortillas filled with fluffy scrambled eggs, sautéed green pepper, shallots, tomatoes, and melted cheese! YUM!

What is the benefit of cooking in an air fryer?
Anyone can do it, and there is no open flame so it's a safer cooking alternative for the kids.
It's basically a set-it and forget-it way of cooking.
It keeps the kitchen (and you) cool with no standing at the stovetop.
What exactly is an air fryer?
I like to think of it as a tabletop convection oven.
Air fryers have heating elements that are located on top of the until with powerful fans that circulate hot air rapidly around the food.
The name air fryer is misleading, however, as an air fryer can also bake, roast, and even sauté as you'll see in this recipe for breakfast burritos.
How long do air fryer breakfast burritos take to make?
The part that takes the longest is the sautéing of the green pepper, shallots, and tomatoes. That part took about 10 minutes at 400-degrees.
The cooking of the scrambled eggs takes approximately 9 minutes, in three-minute intervals (stirring in between), at 350-degrees.
Adding the filling into the tortillas, adding them to the casserole dish and heating them again to melt the cheese will take an additional 2-3 minutes.
All told, you're looking at about 22-23 minutes for 3 breakfast burritos.
How many breakfast burritos will this recipe make?
Three.
If you'd like to make more, you'd have to do them in batches.
Can these scrambled egg breakfast burritos be made on the stovetop?
You bet!
Heat up your favorite medium-size skillet and follow the same recipe except cook the egg on the stovetop over medium heat.
Can breakfast sausage be added to the burritos?
Yes! Just make sure you cook the sausage first.
To cook breakfast sausage in an air fryer, add about ½ pound of bulk pork sausage to an air fryer accessory pan.
Turn the power to 400-degrees and cook for 4-5 minutes. Remove the pan and break the sausage apart with a spatula to form crumbles.
Return the sausage back to the air fryer and cook for an additional 4-5 minutes, or until the sausage is no longer pink and completely cooked throughout.
Crumble the sausage thoroughly, and set aside while preparing the balance of the recipe as written.
Stir the cooked sausage into the scrambled eggs before filling and rolling the tortillas.
NOTE - IF adding breakfast sausage, the number of servings for this recipe will increase from 3 breakfast burritos to 4 or 5 breakfast burritos.
How to make air fryer breakfast burritos:
- Finely dice green pepper and shallots.
- Add them to a 6½" - 7" air fryer shallow pan along with a touch of olive oil, salt, and pepper.
- Set the air fryer to 400-degrees and cook for 7 minutes, stirring halfway through.
- Add the finely chopped tomato to the pan and cook for an additional 3 minutes. Remove and set aside.
- Add 2 tablespoons of butter to the 6½" - 7" "cake pan" and melt it in the air fryer for approximately 1 minute at 350-degrees.
- Whisk 4 eggs in a medium bowl along with 2 tablespoons milk, ½ teaspoon salt, and ¼ teaspoon pepper.
- Add the beaten eggs to the pan with the melted butter and place it in the air fryer at 350-degrees for 3 minutes.
- Remove, stir, and repeat at three-minute intervals until your desired doneness.
- (Note - I did mine three times at three-minute intervals)
- Add the sautéed vegetables to the scrambled eggs and stir to combine.
- Fill and roll three 8" flour tortillas with the scrambled egg mixture and some shredded cheese.
- Add the breakfast burritos to a small casserole dish, top with prepared salsa, and additional shredded cheese.
- Add the breakfast burritos to the air fryer to heat through at 375-degrees for 3 minutes, or until the cheese has melted.
What can be used besides specific air fryer accessories to make this recipe?
Disposable aluminum trays and pie pans will work in a pinch.
Look in your cabinets and see what you have that will fit inside your particular air fryer.
And don't forget, metal will work in an air fryer, unlike a microwave oven.
That said, air fryer pans and accessories do get HOT so please use caution when removing pans and accessories from an air fryer after cooking.

Air Fryer Breakfast Burrito
Ingredients
- ½ cup finely diced green pepper

- Add 2 tablespoons of butter to a 6½" - 7" "cake pan" and melt it in the air fryer for approximately 1 minute at 350-degrees.
