Use a serrated knife to gently cut off the top ⅓ of the croissant. Feel free to save the top piece for another purpose, or as a snack.
Gently hollow out the interior of the base of the croissant to make room for the filling, being very careful not to break any holes in the croissant, or make the walls too thin. Set the prepared croissant/croissants aside on a air fryer-sized baking sheet that is compatible with your machine.
In a medium-sized bowl, whisk together 2 eggs (per sandwich), 1 tablespoon milk, and 1 tablespoon melted and cooled butter, along with the fillings of your choice.
Carefully and slowly spoon (or pour) the beaten eggs and filling into the center of each prepared croissant, taking your time as the eggs gradually work their way fully into the croissant.
Preheat air fryer to 350 degrees F (175 degrees C) for 2-3 minutes.
Bake the egg filled croissant in the preheated air fryer for 10-12 minutes rotating the sandwiches halfway through the process for even cooking. Carefully remove the sandwiches after cooking and serve hot.

For demonstration purposes (in the video, and the images) I used egg, bacon, mozzarella cheese, and green pepper for one flavor option. And eggs, Feta cheese, and spinach for the second option. Feel free to get creative.Air fryer cook time and temperature is 350 degrees F (175 degrees C) for 10-12 minutes.Conventional oven cook time and temperature is 375 degrees F (190 degrees C) for approximately 20-22 minutes.Store sandwiches in an airtight container in the refrigerator for up to 3 days.Cooked sandwiches may be frozen. Store in an airtight freezer container or bag and freeze for up to two months. Thaw in the refrigerator overnight and reheat (uncovered) in an airfryer or conventional oven until hot and crispy.
