Kitchen tools and equipment needed:
- air fryer (optional, I used it to cook the eggs)
- food processor (for grinding the ham)
- mixing bowls
- measuring cups and spoons
- silicone spatula or wooden spoon
- air tight refrigerator container for storage
- food storage labels (optional)
The easiest way to make hard cooked eggs:
For this recipe, I used my air fryer to cook the hard-boiled eggs, and let me tell you, it worked like a charm!
There's no messing with boiling water, and you use cold eggs straight from the fridge. Brilliant!
Cook them for 16 minutes at 250°F.
When they're done, you immediately remove them from the air fryer (be careful, they're hot) and plunge the eggs into ice water until they're cool enough to handle.
Once they're cool, they're ready to peel.
I find it easier to peel the eggs in a bowl of water, or under running water in the sink, but either way, the shells come off cleanly and easily.
And what's even better than an easy-to-peel hard-cooked egg? Eggs that are perfectly cooked with no ugly gray/green ring around the yolk. Yay!!
How to make hard-cooked eggs in an air fryer:
Can leftover ham be used for this recipe?
It sure can!
You'll need approximately 3 cups of ground ham, so plan accordingly with your leftovers.
You can also use deli ham if you prefer.
I used two small ham steaks.
Additional add-ins suggestions:
Well, let's see. How about:
- minced shallots
- dehydrated onion
- chopped scallions
- minced radishes
- bacon bits
- lemon zest
- Old Bay seasoning
- yellow mustard
- ketchup

How finely should the ham be chopped or ground to make ham salad?
That's really a matter of personal preference, but for me, when I made this ham and egg salad spread, I used my food processor to mince the ham into tiny pieces (see photo below).
However, if you'd like your ham to be in larger pieces, feel free to chop it using a chef's knife, so you'll have more control over the end result.

What is the best way to chop hard-boiled eggs for making egg salad?
Again, it's a matter of personal preference regarding the size of the egg pieces within your salad.
I used a pastry blender (see below) to chop the hard-cooked eggs, but I didn't mince them too finely as I wanted them to be visually noticeable within the spread.
If you prefer using a chef's knife or even a fork, those will also work for chopping hard-boiled eggs.

Can Miracle Whip be used as a substitute for mayonnaise in this recipe?
Yes, it can.
You may want to reduce the amount of sweet pickle relish you add to this recipe if using Miracle Whip sandwich spread, as I believe Miracle Whip tends to be sweeter in flavor than mayonnaise. At least, that's been my experience.
Can ham and egg salad be frozen?
I caution you against freezing this sandwich spread because when it thaws, there will be an unfavorable textural change where the eggs will become rubbery, and the dressing watery.
How to store this sandwich spread for optimal freshness:
Add the salad to an airtight container marking the outside of the container with the date. This salad will keep fresh for up to 5 days in the refrigerator.
Serving suggestions:
We enjoyed this sandwich spread for lunch on a few slices of hearty whole-grain bakery bread, but it would also make an amazing breakfast or dinner when you want something quick.
It would be delicious on a buttery croissant, toasted bagel, celery stick, or as a dip for fresh veggies.
Or, how about wrapping up a scoop in a deliciously crunchy lettuce leaf?
You can also serve it as a spread with crackers or bread cubes for a party appetizer.
Use your imagination as there are no right or wrong ways to serve this amazing spread!

Ham and Egg Salad Spread
Equipment
- air fryer optional (for cooking eggs)
- food processor optional (for mincing ham)

Ingredients
- 6 large hard cooked eggs peeled and chopped
- 3 cups minced ham (leftovers are great for this)
- 1 cup finely chopped celery
- 2 teaspoons dill pickle relish
- 2 teaspoons sweet pickle relish
- ½ cup mayonnaise
- 1 tablespoon Dijon mustard
- 1 teaspoon ground coriander
- ½ teaspoon kosher salt or to taste
- ½ teaspoon black pepper or to taste
Instructions
- Add all the ingredients into a large bowl and mix well to combine.
- Cover and refrigerate for 1-2 hours before serving.
