This is my take on a classic Italian salad—with a twist. That's what I love about recipes; they can be altered and adapted to your tastes and preferences if desired. Kitchen tools and equipment needed:
- indoor grill pan
- chefs knife
- serrated knife (optional, for slicing tomatoes)
- cutting board
- serving platter
- tongs
- microplane (optional, for shredding the Parmesan cheese)
- pastry brush
How to grill onion and zucchini slices:
It could not be easier.
If you have an indoor grill pan, you can get those pretty grill marks on your veggies. However, if you don't have an indoor grill pan, you can still "grill" your veggies in a skillet for the same great flavor, minus the markings.
All you need to do is heat your pan over medium heat. Brush both sides of the sliced veggies with a light coating of extra virgin olive oil, salt and pepper, and then place the veggies onto the hot pan.
Give them two minutes to cook on the first side, and then flip and cook them for an additional 1-2 minutes on the second side.
Remove the veg from the pan when finished. That's it. Easy peasy.
Can an outdoor grill be used for this recipe?
Sure, but you must be careful that the veggies (once cooked) don't fall through the grill grates.
Did you know that you can also put an indoor grill pan on an outdoor grill for reasons such as this? You sure can.
Follow the same instructions as above, but preheat the grill pan on the outdoor grill and then you're ready to rock and roll.
Can a Blackstone flattop grill be used to cook the zucchini and onion?
You bet. Have fun with this.
Can this Caprese salad supreme be served as an entrée?
It sure can.
This delicious and colorful Italian tomato and cheese salad is hearty enough to serve as a main course for either lunch, or dinner.
Can the prosciutto be left out of this Italian tomato salad?
Of course.
If you'd like to make this a completely vegetarian salad, by all means, leave the prosciutto out.
Can this Caprese salad with grilled zucchini and onions be made in advance?
Yes, but I recommend waiting to drizzle the extra virgin olive oil and balsamic vinegar dressing over the top right before serving.
The entire salad (minus the dressing) can be assembled, covered with plastic wrap, and stored in the refrigerator for up to 4 hours before serving if desired.

How many servings does this salad make?
As written, the recipe will serve six as a side dish.
If making this as a main course, it will make three or four servings.

Caprese Salad with Zucchini, Prosciutto and Burrata
Equipment
- serving tongs
Ingredients
- 2 cups butter lettuce or your favorite lettuce
- 2 medium ripe tomatoes sliced, and seasoned with salt and pepper
- 1 medium sweet onion sliced into rings
- 4 ounces prosciutto slices
- 1 medium zucchini sliced
- 2 tablespoons extra virgin olive oil divided
- 3 balls (approximately 2 ounces each ball) burrata
- 1 tablespoon balsamic vinegar
- 2 teaspoons kosher salt divided, each ingredient element needs to be salted.
- 1½ teaspoon black pepper divided, each ingredient element needs to be peppered.
- ½ teaspoon dried basil
- ½ teaspoon dried oregano
- 2 tablespoons shredded Parmesan cheese
- fresh basil leaves for garnish optional
Instructions
- Brush the slices of zucchini and onion on both sides with olive oil and season with salt and pepper.
- Grill the veggies on a grill pan over medium heat until grill marks have formed the veggies and are slightly softened (approximately 2 minutes per side). Once grilled, set the veggies aside.
- Mound the lettuce in the center of a large serving platter. Alternate and fan slices of tomato, grilled zucchini, and slices of prosciutto so each ingredient can be seen. Continue the same process the entire way round the mound of lettuce.
- Place the burrata balls in the center of the lettuce and season the cheese with salt and pepper.
- Place the grilled onions over the entire salad and then sprinkle the whole salad with the dried basil and oregano.
- Top with the shredded Parmesan cheese and chill for at least 30 minutes before serving.
- Drizzle the entire salad with extra virgin olive oil and balsamic vinegar and top with fresh basil leaves (optional) before serving.
