Caprese Salad with Zucchini, Prosciutto and Burrata
This Caprese Salad with Zucchini, Prosciutto, and Burrata isn't your typical (or traditional) Caprese salad; it's WAY better, thanks to the grilled zucchini, onions, and all the extra special touches!

Brush the slices of zucchini and onion on both sides with olive oil and season with salt and pepper.
Grill the veggies on a grill pan over medium heat until grill marks have formed the veggies and are slightly softened (approximately 2 minutes per side). Once grilled, set the veggies aside.
Mound the lettuce in the center of a large serving platter. Alternate and fan slices of tomato, grilled zucchini, and slices of prosciutto so each ingredient can be seen. Continue the same process the entire way round the mound of lettuce.
Place the burrata balls in the center of the lettuce and season the cheese with salt and pepper.
Place the grilled onions over the entire salad and then sprinkle the whole salad with the dried basil and oregano.
Top with the shredded Parmesan cheese and chill for at least 30 minutes before serving.
Drizzle the entire salad with extra virgin olive oil and balsamic vinegar and top with fresh basil leaves (optional) before serving.

Store any leftovers in an airtight container for up to 2 days.Not recommended for freezing.
