    Chilled Crab and Pea Seafood Salad

    Chilled Crab and Pea Seafood Salad is what you should reach for when you'd like a light meal that's heavy on flavor and super easy to prepare.

    We've probably all heard the puny phrase "Sea food, eat food," well, I've always followed (and enjoyed) that bit of witticism, so here are a few delicious seafood recipes I invite you to try - Shrimp Rangoon Garlic Toasts, Muffin Tin Crab Cakes, Air Fryer Potato Crusted Cod, Four Ingredient Jammin' Salmon, and Seared Scallops with Linguine and Asparagus.

    Kitchen tools and equipment needed:

    • chef's knife
    • cutting board
    • mixing bowls
    • measuring cups and spoons
    • citrus zester
    • citrus juicer (optional)
    • silicone spatula
    • plastic wrap (for chilling the salad)

    Add-in and swap out suggestions:

    Of course, if you'd prefer not to use imitation crab, by all means, use the real deal.

    Or, if you'd like to substitute chopped, cooked shrimp, that would also be delicious.

    Adding chopped cilantro would add another layer of brightness and flavor if you enjoy it, as would a pinch (or two) of ground coriander, which is the seed of the cilantro plant.

    Orange or lime zest and juice would make a tasty substitution for lemon, if you're so inclined, and finely chopped mandarin orange segments would also be a lovely and unusual addition.

    What is imitation crab?

    Also known as surimi, imitation crab is a traditional Japanese ingredient made from minced white fish (primarily pollock), crab extract, and a few other ingredients, then processed to resemble crab legs.

    Surimi is precooked and packaged, so it requires no additional cooking and can be eaten directly from the package.

    Can dried dill be used in place of fresh dill?

    Yes, it can, but be aware that dried herbs are stronger in flavor than their fresh counterparts, so I recommend reducing the amount of dried dill to 1 tablespoon if using it in place of fresh dill.

    How long does this recipe take from start to finish?

    This recipe comes together very quickly. About 10 minutes from start to finish.

    That said, I recommend covering the finished salad with plastic wrap and chilling it in the refrigerator for at least 2 hours before serving, so all the flavors have a chance to marry and meld.

    Please plan accordingly.

    Seafood salad serving suggestions:

    You can eat this seafood salad scooped on top of your favorite lettuce as a main course or starter, or wrapped in lettuce leaves for additional pizzazz.

    Use it as a sandwich filling piled high on a croissant, or other soft-textured bread or roll.

    Spread it on crackers or use it as a dip for vegetables or chips, making it a deliciously unusual appetizer.

    Spoon it generously into celery sticks or into an avocado half as a light lunch or snack.

    Mix it into your favorite variety of cooked pasta and serve it hot or cold.

    And lastly (but my favorite way), eat it directly out of the bowl with a fork, savoring each cool, creamy bite with no one else around. *wink*

    How to store this imitation crab and pea salad:

    Store this chilled seafood salad in an airtight container in the refrigerator for up to 7 days.

    This salad is not recommended for freezing.

    Ingredients
      

    • 2 packages (8 ounces each package) imitation crab legs roughly chopped
    • ½ cup mayonnaise or additional if you like a creamier salad
    • ¼ cup chopped scallions
    • 2 tablespoons finely diced red bell pepper
    • ¾ cup frozen peas
    • ½ teaspoon fresh lemon zest
    • 1 tablespoon fresh lemon juice
    • 2 tablespoons fresh chopped dill 1 tablespoon dried dill may be substituted
    • 2 tablespoons minced shallots
    • ¾ teaspoon garlic powder
    • ½ teaspoon Old Bay seafood seasoning
    • ¾ teaspoon kosher salt
    • ¼ teaspoon black pepper

    • Add all the ingredients into a large bowl. Stir well to combine.
    • Cover the bowl with plastic wrap and chill the salad for at least 2 hours before serving.
