- 13" x 9" baking dish
- spatula
- toothpick or cake tester

Substitution and add-in suggestions:
Substitutions:
Feel free to substitute coconut or vegetable oil if you prefer.
Any flavor of cake mix will work. I went with yellow so the color of the cake wouldn't change.
Vanilla or almond extract would make a tasty substitution for the coconut extract if desired.
Why not add a touch of rum extract to really bump up the piña colada flavor? One teaspoon ought to do.
Using candied cherries in place of the maraschino cherries is an acceptable substitution if needed.
Add-in suggestions:
- chopped nuts (lightly toss them in flour before adding them to the cake batter)
- chopped mandarin orange segments (lightly toss them in flour before adding them)
- lime zest (add 2 teaspoons of freshly grated zest into the batter)
- orange zest (add 2 teaspoons of fresh zest into the batter)

Why is this considered a dump cake?
I called this a dump cake because basically all the ingredients are dumped into the mixing bowl and then dumped into the baking dish.
Baking honestly doesn't get any easier than making a dump cake!
How to store a piña colada dump cake:
Cool the cake completely and then cover tightly with plastic wrap.
Store it at room temperature for up to 3 days, or store it in the refrigerator for up to 7 days.
Can this cake be frozen after baking?
You bet!
Cool it thoroughly and then freeze it in individual slices (or larger portions) in an airtight freezer container or zip-top freezer bag.
Label the bag with the date and freeze for up to 3 months. Thaw in the refrigerator overnight.
I like to use these dissolvable content labels for adding dates and container content information to the outside of refrigerator and freezer packages.
Serving suggestions:
Adding a whipped cream dollop is a great way to serve any cake, and the same holds true for a big scoop of your favorite ice cream or gelato.
However, if you really want to feed your sweet tooth (and you didn't hear this from me...LOL), why not add a dollop of vanilla pudding or a light drizzle of sweetened condensed milk over the top right before serving?
Or, if you want to be truly decadent (and you're feeding a 21 and older crowd), spritz a light spray of rum on top of the entire surface once baked and allow the alcohol to soak into the cake while it's cooling. Ya, mon!
Should this tropical dump cake be served cold or at room temperature?
It's totally your call. It will be a delicious treat, no matter whether warm or cold!
When to serve this tropical dump cake:
To me, this cake screams pool party, luau, summertime BBQ, potluck, or block party.
However, you can most certainly serve it whenever you like, even in the dead of winter, for a tropical taste to the islands, even if you can't get away from the cold.

Piña Colada Dump Cake
Equipment
- cake tester or toothpick

Ingredients
- 1 can (20 ounces) pineapple chunks drained well
- 1 jar (10 ounces) maraschino cherries drained well and stems removed
- 1 box yellow cake mix your favorite variety
- 1 can (13 ounces) full-fat coconut milk stirred well
- 2 large eggs
- ¼ cup grapeseed oil vegetable oil may be substituted
- 1 teaspoon coconut extract vanilla may be substituted
- 1 cup sweetened flaked coconut
- ¼ cup confectioners sugar optional for dusting
Instructions
- Preheat the oven to 350 degrees F (175 degrees C).
- Liberally spray the baking dish with baking spray. Set aside.
- Drain the pineapple chunks and the maraschino cherries into a large bowl. Set the fruit aside and save the juice for another use if desired.
- Add the cake mix to a large bowl along with the coconut milk, eggs, oil and coconut extract. Blend until well combined, scraping down the sides of the bowl as needed.
- Gently fold the drained fruit and flaked coconut into the cake batter until thoroughly combined.
- Pour the cake batter into the prepared baking dish and use a spatula to layer the batter evenly into the pan.
- Bake for 45-50 minutes, or until a toothpick inserted into the center of the cake comes out clean.
- Cool the cake completely before topping with a dusting of confectioners sugar.
