Mix any (or all) of these ingredients in to the slow cooker after the egg and bread cubes have been thoroughly combined, *except where otherwise noted*.

- chopped green bell pepper, lightly sauteed
- chopped red bell pepper, lightly sauteed
- chopped broccoli, lightly steamed
- chopped, onions, lightly sauteed

- breakfast sausage, cooked and crumbled

Can this slow cooker breakfast casserole be prepared in advance?
You bet!
To make life easier, you can certainly assemble all the ingredients, minus the cornflake crumbs, melted butter drizzle, and scallions (if using). Store the crock (covered) in the refrigerator overnight.
In the morning, plan accordingly (I suggest early because it takes 4 hours to cook), and allow the casserole to sit at room temperature for 30-40 minutes to warm slightly. Top the casserole with the cornflake crumbs and drizzle with the melted butter.
Meanwhile, preheat the slow cooker base on high for at least 10 minutes before adding the covered crock with its contents into the base to cook (on high) until puffed and golden, which takes approximately 4 hours.
How many people will this recipe serve?
As written, this recipe will serve roughly 8 people. However, if you decide to do a lot of ingredient add-ins, the serving size will undoubtedly increase.
How to properly store leftovers?
Refrigeration storage:
Cool the casserole completely and store any leftovers in an airtight container in the refrigerator for up to 5 days.
Freezer storage:
This ham-and-egg breakfast strata freezes beautifully. Cool the cooked strata completely and add the leftovers to a freezer-safe bag or container and freeze for up to 3 months.
I like to use these dissolvable content labels for adding dates and container content information to the outside of refrigerator and freezer packages.
Reheating instructions:
If previously frozen, thaw the strata completely and reheat in a preheated 350 degree F oven (175 degrees C) until hot (approximately 10-12 minutes.
Or reheat in a preheated air fryer (325 degrees F) for approximately 5-7 minutes.
Be aware that reheating in a microwave will work, but the cornflake topping won't be crispy, and the strata itself may become rubbery.

Slow Cooker Breakfast Strata with Ham and Cheese

Ingredients
- 1 loaf (about 6 cups, cubed) firm white bread, cut into approximately 1½" cubes, with or without crust (I always use the crust).
- 1 stick (10 tablespoons) butter, divided I used salted butter, melted
- 12 large eggs at room temperature
- 2 teaspoons kosher salt
- 1 teaspoon black pepper
- 1 tablespoon Dijon mustard
- ¼ cup buttermilk
- 1¼ cup milk I used 2%
- 2 cups diced ham
- ¾ cups sharp cheddar cheese shredded
- ¾ cups Swiss cheese shredded
- 1½ cups cornflake crumbs
Instructions
- Melt 2 tablespoons of butter in the slow cooker with the temperature set on high. Brush the bottom of the cooker with the melted butter.
- Place the prepared bread cubes into the cooker.
- Whisk together the eggs, buttermilk, milk, Dijon mustard, salt and pepper in a large bowl until completely combined. Pour the milk mixture over the bread in the cooker and stir well to combine.
- Add the ham, and the shredded shredded cheese into the cooker and stir (if desired, but not necessary). Top the entire casserole evenly with the cornflake crumbs.
- Melt the remaining 1 stick of butter and drizzle it evenly over the contents of the slow cooker. Cover and cook on high for approximately 4 hours, or until the casserole has puffed in volume, turns golden brown, and is completely set in the center when poked with a skewer or knife and it comes out clean.
- Uncover and allow the strata to sit for 10 minutes before serving.
- If desired, top with chopped scallions and additional shredded cheese (not shown) before serving.
