Not that long ago, I was given a bag of the most delicious pecans from my dear sweet friend Nancie McDermot.
I wanted to make something extra special with these delicious pecans, and something quintessentially southern. I settled on making coconut pecan praline candy, and I’m 100% certain they’re the best pecan pralines I’ve ever made or eaten!
I decided to combine my raw cashews along with some roasted, salted peanuts for a depth of flavor you wouldn’t get with cashew or peanut butter alone.
In addition, I added some raw honey for a touch of sweetness and a small bit of macadamia oil to help make it creamy and unique.
Making marzipan has been on my list of things I’ve wanted to make for years and years. Why it took me so long to make it, I’ll never know.
But what I do know is now that I finally have, I’m excited to have the block of homemade marzipan wrapped and stored in my fridge to mold, sculpt, and play with whenever the whim strikes.
The texture of this baked steel cut oatmeal is truly incredible. I love the heartiness that each spoonful transports to my waiting taste buds and hungry tummy knowing that both will be happy, and satisfied!
Plus, as a bonus, there will be no more of that pesky growling and grumbling from my stomach until lunchtime.

This dish of Sautéed Creamed Spinach & Strawberries came about one night when I was contemplating a side dish to serve with some fish I was cooking.
Since I had strawberries in the fridge that I needed to use before they spoiled, I tossed some into the sauteed creamed spinach I was preparing. The completed dish tasted amazing, and it was a feast for the eyes as well as the taste buds!
