Can fresh herbs be used in place of dry herbs for this recipe?
Yes, by all means, use fresh herbs if you prefer.
Parsley, sage, rosemary, and thyme are wonderful fresh herbs for stuffing/dressing.
I suggest starting with one teaspoon (minced) of each (or any combination) of your favorites. From there, you can add more if you like, depending on how fragrant the dressing smells before it's baked.
Always remember to use your sense of smell while cooking to accurately predict how something will taste.
What is the difference between chicken stock and chicken broth?
A stock uses bones, so it's richer and has more depth of flavor than a broth.
Can homemade stock or broth be used in this recipe?
Of course!
If you're fortunate enough to have flavorful, homemade chicken stock (or broth) on hand, use it for this recipe. However, you can supplement any homemade broth/stock with store-bought and visa-versa.
Can this Hawaiian sweet roll stuffing be made in advance?
Yes.
Feel free to make it up to two days in advance of when you plan to serve it and keep it in an airtight container, or well wrapped in its casserole dish, in the refrigerator before baking.
Take the stuffing out of the refrigerator 30 minutes before heating. Preheat the oven to 350 degrees F/175 degrees C and bake the stuffing (covered) for 40 minutes, uncover, and continue baking for 10-15 minutes.
Suggested stuffing add-ins and substitutions:
- cooked pork sausage
- dried cranberries
- toasted nuts (your favorite variety)
- cooked, crumbled bacon
- diced apples
- dried pineapple
- French fried onions (topping after baking)
- sauteed mushrooms
- substitute 1 cup of pineapple juice for 1 cup of chicken stock
- substitute all vegetable broth for the chicken stock (broth)
Can the moisture level of this stuffing be adjusted?
Yes, by all means use as much, or as little liquid as you like to moisten the stuffing to your desired preference.
As the stuffing bakes, it will dry a bit, but if you like dryer stuffing with a more crisp texture, please cut back on the amount of liquid used in this recipe.
How to make vegetarian sweet Hawaiian roll dressing?
Swap out vegetable broth for chicken stock/broth and you have a completely vegetarian dish. Easy.
What is the purpose of toasting the torn Hawaiian rolls in the oven before assembling the dressing?
Toasting the rolls better allows them to soak up the stock (or broth) which makes a more cohesively textural dressing/stuffing.

Buttery Sweet Hawaiian Roll Stuffing
Equipment
Ingredients
- 6 cups Hawaiian sweet rolls torn into chunks
- 3 cups chopped celery
- 3 cups chopped onions
- 1½ teaspoon kosher salt
- ¾ teaspoon black pepper
- 1 tablespoon olive oil
- 2 tablespoons butter
- 1 tablespoon poultry seasoning
- 2 teaspoons garlic powder
- 3-4 cups chicken stock
Instructions
- Preheat oven to 400 degrees Fahrenheit (205 degrees Celsius).
- Tear the sweet Hawaiian rolls into bite-sized pieces and place them evenly in a single layer on two baking sheets lined with parchment paper (optional).
- Toast them in the preheated oven for 10 minutes. Remove from the oven, stir well, and return them back into the oven to continue toasting for an additional 7-10 minutes, or until deeply golden brown. Cool completely.
- Meanwhile, In a large high-sided skillet, heat the oil and butter over medium heat. Add the chopped celery, onion, poultry seasoning, garlic powder, salt and pepper. Cook, stirring occasionally until the vegetables are soft and slightly translucent. Approximately 4-5 minutes. Cool.
- Add the toasted rolls and cooked and cooled onions and celery to a very large mixing bowl. Stir to combine. Add between 2-3 cups of chicken stock (or broth) to the bowl in 1 cup increments, stirring well after each addition. *Note - depending on how wet you like your stuffing you may or may not use the entire 3 cups of broth.
- Once your desired consistency has been reached, spoon the stuffing into a 4-quart baking dish that has been sprayed with cooking spray. Now you can bake for 30 minutes, uncovered, and serve. Or cool completely, cover, and refrigerate for up to 2 days before baking (see notes).
