That said, these are the original photos I took of these cookies in 2014, and the recipe has been slightly modified (by me), so they're not the original (low-calorie) version published in 2014.
However, by swapping Swerve sugar substitute for granulated sugar, you can duplicate the original recipe and significantly cut the calories in these cookies. The choice is yours.

I think peanut butter is my favorite food. If it's not at the very top of my list, it's definitely in my top five! When I saw this no-bake recipe for Chocolate Peanut Butter Drop cookies in a Cooking Light cookbook I own called "Lighten Up, America!," I knew I had to make them!
Plus, I know it's hard to believe, but I really didn't do too much differently from the recipe in the cookbook, except I added a little more peanut butter than called for and a pinch of salt.
You can now consider this recipe "lightly" adapted from the Cooking Light cookbook called "Lighten Up, America!" Seems appropriate, don't you think? LOL
Why does this recipe work?
These little cookies pack a powerhouse of flavor.
The intense, rich chocolate flavor combines perfectly with the peanut butter, and I'm happy to report that the peanut butter does not get lost within all that chocolate. It stands its ground perfectly.
Are these no-bake cookies considered healthy?
Well, that might be a stretch, but let's just say they're "healthier" than other cookies you might choose to snack on.
Thanks to the fiber from oats and the known health benefits of dark chocolate, these delightfully easy and tasty no-bake cookies are sure to satisfy your sweet tooth without too much guilt.
Add-in or swap-out suggestions:
Add-ins:
- raisins
- dried cranberries
- chopped nuts (your favorite variety or mix)
- coconut (unsweetened or sweetened)
- chopped pretzels
- mini-marshmallows
Swap-outs:
- swerve no-calorie sweetener in place of the granulated sugar
- sunflower or almond butter in place of the peanut butter
- crunchy peanut butter in place of creamy peanut butter
- unsalted butter in place of salted butter
- milk chocolate chips in place of semi-sweet chocolate chips
- almond extract in place of vanilla extract

NO-BAKE CHOCOLATE PEANUT BUTTER DROP COOKIES
Equipment
Ingredients
- 1 cup granulated sugar (or swerve sugar substitute)
- ⅓ cup butter I use salted
- ¼ cup unsweetened cocoa powder
- ¼ cup milk I used 2%
- ¼ cup semi-sweet chocolate chips
- 1 pinch kosher salt
- ½ cup peanut butter I used creamy
- 1 teaspoon pure vanilla extract
- 2 ¼ cups uncooked quick-cooking oats
Instructions
- In a medium saucepan over medium heat, melt the butter and sugar together until the sugar has dissolved. Stir in the cocoa and milk and heat through.
- Turn off the heat and add the chocolate chips, salt, peanut butter, and vanilla. Stir until the chocolate and peanut butter have completely melted.
- Stir in the oats and thoroughly combine all ingredients.
- Drop the mixture onto a parchment-lined baking sheet using a small cookie scoop or tablespoon.
- Refrigerate until firm (approximately 30 minutes)
