What we really love about this particular cornbread recipe is the texture.
Thanks to the addition of buttermilk this cornbread is moist, with of a cake-like texture which makes it a whole lot easier to spread butter on. Unlike most of the other dry, crumbly cornbread’s we’re used to.
JALAPENO AND CHEDDAR CORNBREAD {PRINT THIS RECIPE}
Serves: 6-8 Prep Time: 10 minutes Cook Time: 25-30 minutes
1 1/4 cups all-purpose flour
1 cup yellow cornmeal
1 tablespoon baking powder
3 tablespoons packed brown sugar
1 teaspoon ground roasted cumin
1 tablespoon garlic powder
1 teaspoon kosher salt
1 cup buttermilk
2 large eggs
1/4 cup butter, melted
1 can (4 ounces) fire roasted jalapenos
1 cup shredded sharp cheddar cheese
-Preheat oven to 375 degrees
-In a large bowl, whisk together the flour, cornmeal, baking powder, brown sugar, cumin, garlic powder, and salt.
-In a small bowl, whisk together the buttermilk, eggs, melted butter and jalapenos.
-Stir the wet ingredients into the dry ingredients until just combined. Stir in the cheddar cheese.
-Spray a 9×9 inch baking pan with cooking spray. Pour the batter into the prepared pan.
-Bake for 25-30 minutes or until a toothpick inserted in the middle comes out clean.
-Cool for 5-10 minutes and then cut into squares and serve.
I’m coordinating this cornbread recipe along with my Southwestern sunset inspired cactus wine glass. I think the colors compliment each other nicely and would make for a really pretty tablescape when serving Southwestern inspired foods.

I’ve read a few posts here and I can actually relate. I am in love with Marie Callender's cornbread. They are simple to make and super yummy, especially with honey butter. I've been a fan of MC's ever since I was a little girl, and have fond memories of eating it with my family back in San Jose, CA.
