    Homemade Guacamole with Pork Rind Dippers

    When you're eating a low carb diet, and you're craving guacamole, but not all those carbs found in corn and tortilla chips it's time to break out this homemade guacamole and some no-carb pork rinds for dipping.

    • pastry blender
    • Mixing Bowls
    • measuring cups and spoons
    • chef's knife
    • cutting board
    • citrus juicer

    Ingredients
     
     

    • 4 ripe avocados peeled, pits removed and mashed
    • ½ cup finely chopped red onion
    • ½ cup prepared salsa your favorite variety
    • 1½ teaspoon ground cumin
    • 1 teaspoon ground coriander
    • 1 teaspoon smoked paprika
    • 2 cloves garlic, minced
    • 1 tablespoon fresh lime juice
    • ¼ teaspoon hot sauce or to taste
    • 2 tablespoons fresh chopped cilantro
    • 1 teaspoon coarse salt
    • ½ teaspoon black pepper
    • pork rind dippers optional

    Instructions
     

    • Place all the ingredients in a large bowl.
      Stir thoroughly to combine.
    • Cover well with plastic wrap directly on top of the guacamole.
      Refrigerate at least 30 minutes before serving.

    This guacamole will keep for only 1 day, covered well with plastic wrap placed directly on top of the guacamole, in the refrigerator.
    Once it turns brownish in color, it's still edible, but not nearly as appetizing.
