    Addicting Keto Guacamole with Pork Rind Dippers

    When you're eating a low carb or Keto diet, and you're craving guacamole, but not all those pesky carbs found in corn and tortilla chips, it's time to break out this Addicting Keto Guacamole with Pork Rind Dippers.

    NOW it's time to do the low carb party dance, people. Keto Guacamole with Pork Rind Dippers has the creaminess you love, and the crunchiness you crave. You'll never miss the high carb tortilla chips.

    I've been making (and enjoying) my own guacamole recipe for years and years. My husband claims it's the best guacamole he's ever eaten, so who am I to contradict him? LOL

    When we started eating a low carb, keto diet, a few weeks ago, I knew that guacamole wouldn't be an issue, what with all those healthy fats. But figuring out a replacement for the traditional dipper was now a dilemma.

    Until I had my lightbulb moment! BINGO!

    Please let me introduce to you this Addicting Keto Guacamole with Pork Rind Dippers. It's an idea whose time has come, my friends!

    Snack until your heart's content!

    The ingredient list;

    • Ripe Avocados
    • Prepared Salsa
    • Chopped Red Onion
    • Minced Garlic
    • Smoked Paprika
    • Ground Cumin
    • Ground Coriander
    • Fresh Lime Juice
    • Hot Sauce (optional)
    • Salt and Pepper
    • Fresh Cilantro
    • Pork Rinds OR tortilla or corn chips

    From there, you'll only need about 5 minutes of hands-on time to mix up some of the BEST, most ADDICTING guacamole you've ever eaten. Of course, you don't need to use the pork rinds as your dippers, but they're a wonderful option for those of you who are watching your carb intake.

    You'll see in the video below that I used a pastry blender to mash the avocados. While it's a nice tool to use if you have one, it's certainly not a necessity. A fork or two, or even a potato masher will do the job equally as well, so don't feel like you need to run out and purchase one.

    Ingredients
     
     

    • 4 ripe avocados, mashed
    • ¼ cup finely chopped red onions
    • ¼ cup prepared salsa
    • 1½ teaspoon ground cumin
    • 1 teaspoon ground coriander
    • ½ teaspoon smoked paprika
    • 2 cloves garlic, minced
    • 2 teaspoons fresh lime juice
    • hot sauce, to taste, optional
    • 1 teaspoon salt
    • ½ teaspoon black pepper
    • 2 tablespoons chopped fresh cilantro
    • pork rinds

    Instructions
     

    • Place all the ingredients in a medium bowl and stir well to combine. Serve immediately or slightly chilled if desired.
    • When storing, cover with plastic wrap directly on top of the guacamole to prevent oxidation and refrigerate for 1 day.
