How this recipe came to be:
First and foremost, I love cabbage! I love cabbage for many reasons - It's cheap, versatile, and I love the way it tastes.
Secondly, I've also been on a quest to cook lower-calorie meals to drop some weight and get in better shape as I age.
The pork came about because I was tired of eating ground turkey, so I decided to mix things up a bit, so I used ground pork instead...and I'm glad I did!
Why this recipe works:
The flavor is outstanding and very satisfying, and you know how important that is when you're trying to eat healthier and lose weight.
If the meals aren't flavorful and satisfying, then what's the point?!!
The pork is tender and juicy, the cabbage is filling and flavorful, and the spices and seasonings are warm and comforting.
All that PLUS this delicious skillet meal can be on the dinner (or lunch) table in 30 minutes or less!
Winner. Winner. Pork and Cabbage Skillet for dinner!
Can the other ground meat be substituted for pork in this recipe?
Sure thing.
If you'd rather use ground turkey, chicken, beef, or even lamb, these are all great options and will work in this recipe.
Just be aware that if you do make a substitution, the calorie count listed in the recipe card will no longer be accurate.
What are some of the health benefits of cabbage:

- It can help combat inflamation.

How long will it take to make this recipe from start to finish?
Less than 30 minutes.
While the pork is cooking in the skillet (about 10 minutes, on medium/high heat), slice the cabbage and onions.
After the pork is no longer pink, add half of the sliced cabbage to the skillet along with the spices and seasonings. Cover and cook for 7 - 10 minutes.
Add the remaining cabbage to the skillet, stir well, cover, and cook for an additional 5 - 7 minutes, and then it's time to eat!!
There's no oil in this recipe. Why?
I was trying to keep the calorie count low.
However, if you're not concerned with that, feel free to add 2 teaspoons of olive oil to the skillet prior to browning the meat.
And then finish the dish with 2 tablespoons of butter, stirring well before serving.

Changed the recipe u to facilitate using up ingredients I had on hand. Used red cabbage (slight nutritional benefit), sweet onion, and added a smdge of chipotle buillon mixed in 1/2c water) in thus meal. When I served it I added some raisins & cashews. Healthy, easy to make (only used my IP), and nice layers if taste. Think using ground lamb or ground chicken in duck fat would make this even better. Also, would add zucchini noodles and some carrots for even better nutrition. Taste: #8/10. Spiciness: #0/10.
