Luck of the Irish Corned Beef Stuffed Boxty for St. Patty’s Day

Celebrate St. Patrick’s Day with a classic potato pancake that’s called an Irish boxty. This Corned Beef Stuffed Boxty is filled with tender corned beef and tons of melted Swiss cheese.

Does March come in like a lion, and out like a lamb? Or does it come in like a lamb and go out like a lion? I always get those two mixed up. Kind of like starve a cold and feed a fever, or feed a fever and starve a cold? I’m never quite sure. But what I am sure about is how delicious this Irish boxty is. 

 It’s been such a brutal winter for almost the entire country with record breaking freezing temperatures to record breaking snow fall. Is this now what winter is destined to be? I sure do hope not!

However, two things you can always count on of from the month of March is that college basketball takes center stage, and anyone and everyone seems to be talking brackets (except me). And that St. Patrick’s Day is always March 17th, and anyone and everyone turns Irish on that one day a year (me included)! Yay for the Irish Boxty!

Irish Stuffed Corned Beef Boxty Recipe - Kudos Kitchen by Renee

Makes:   6 large Boxty      Prep and Cook Time:  30 minutes

2 cups prepared mashed potatoes
1½  tablespoons ground horseradish
2 cups grated Idaho potato (squeezed dry)
1 teaspoon salt
½ teaspoon pepper
1½ cup all-purpose flour
1 tablespoon baking powder
3 eggs, beaten
½ cup milk
grapeseed oil (or canola) for frying the pancakes
8-10 ounces corned beef, chopped, divided
10 ounces grated Swill cheese, divided
1000 Island Dressing (optional)

-In a large bowl, mix the mashed potatoes and horseradish. Stir in the dried grated potato, salt, pepper, flour and baking powder.

-In a medium bowl, whisk together the eggs and milk. Stir the egg and milk mixture into the potatoes until the mixture is creamy and the consistency of thick pancake batter. *Note – if the mixture is too thick, add a splash more milk.

-Add about 1 tablespoon of oil into a large skillet over medium/high heat. Spoon enough potato batter into the skillet to form an approximate 6″ circle (one pancake at a time). Use the back of a spoon to spread the battter into an approximate ¼” thickness. Cook the boxty until browned on one side. Carefully flip the bosty and cook on the second side until browned. Flip the bosty for the third time and place some of the chopped corned beed and the grated Swiss cheese on half of the pancake.

-Use a spatula to fold the top half of the pancake over the filled portion of the boxty and cook until the cheese starts to melt. Remove the filled boxty to a baking sheet to keep warm in a 300 degree oven and continue the pancake and filling process with the remaining ingredients.

-Keep the boxty warm in the oven until ready to serve. Drizzle the boxty with 1000 Island dressing (if desired), or serve on the side as a dip.
