    Spicy Pumpkin and Spinach Quiche

    Spicy Pumpkin and Spinach Quiche is a wonderful seasonal breakfast or brunch item with a little bit of heat and a whole lot of delicious!

    SPICY PUMPKIN AND SPINACH QUICHE      {PRINT THIS RECIPE}
    Yield: 1 quiche           Prep Time: 10 minutes          Bake Time: 60 minutes

    1 pie crust (store-bought or homemade)
    5 slices of bacon, diced
    1 medium red onion, chopped
    3 eggs
    ½ cup milk
    1 teaspoon garlic powder
    1 teaspoon dried dill weed
    ½ teaspoon red pepper flakes
    1 teaspoon salt
    ½ teaspoon black pepper
    1 package (10 ounces) frozen spinach, thawed and squeezed dry
    1 can (15 ounces) pumpkin puree
    2 teaspoons sriracha
    1 cup shredded Monterey Jack cheese

    -Preheat the oven to 350 degrees
    -In a large skillet, cook the bacon until just shy of crisp. Add in the onion and saute until translucent. Cool.
    -In a large bowl, whisk together the eggs, milk, garlic powder, dill weed, red pepper flakes, salt, and pepper.
    -Add in the spinach, pumpkin, sriracha, cheese, and the cooled bacon and onion mixture.
    -Pour into the pie crust and bake for 60 minutes or until the middle is completely set.
    -Allow to cool slightly and serve warm.

      I eat quiche and savory pies a lot, and spinach with pumpkin is a great combination. But I'm adding sriracha next time! Beautiful pics!
