Watermelon Cucumber Salad is cool and refreshing. It's got all the flavors of summer rolled into one deliciously chilled and colorful salad!
*Disclaimer - This recipe was originally published in 2013. I'm working hard to update all my older recipes with recipe cards, new photos, and additional recipe information. But, getting to all of them will take time. Please bear with me. In the meantime let me assure you that this recipe is still a winner and one I'm sure you'll be well pleased with when you make it at home.
What's cool and refreshing, has an amazing flavor with just a little bit tart and a little bit of sweet?
A salad that will tickle and delight your summertime taste buds in addition to having your family and friends complimenting your melons? Yes, I did go there. LOL
Drum roll, please...TA-DA!
WATERMELON-CUCUMBER SALAD {PRINT THIS RECIPE}
2 cucumbers, peeled, seeded, and sliced (about 3 cups)
1 medium-size seedless watermelon, cut into similar size slices as the cucumber (about 5 cups)
2 teaspoons salt
1 medium-size Vidalia onion, peeled and sliced in similar-size slices
1 teaspoon fresh cracked black pepper
1 cup chopped watercress
3-4 tablespoons chopped mint
3-4 tablespoons chopped, fresh cilantro
1-2 limes, juiced (about 2 tablespoons)
2 tablespoon honey
2 ounces reduced-fat feta cheese, crumbled
1 tablespoon extra virgin olive oil
-Place the cucumber and watermelon slices in a large colander and sprinkle with the salt and stir.
-Allow them to drain in the sink for at least 30 minutes. (The salt will draw out the additional water from the melon and cucumbers to prevent your salad from being too watery).
-Add the sliced onions.
-Place the entire mixture into a large bowl and add the black pepper.
-Pour the lime juice and honey over the mixture and stir well to combine.
*NOTE - If you planning on serving this salad right away mix in the following ingredients, stir again, and serve.
** - If you're making this in advance (like I did), layer the following ingredients on top of the melon, cucumber, and onion mixture and cover with plastic wrap. Refrigerate until you are ready to mix and serve. This will keep your greens from getting soggy.
-Mix in (or layer) the chopped watercress, mint, and cilantro.
-Top with the feta cheese and a drizzle of olive oil.
-Stir, serve and enjoy 🙂
This salad is a real winner for any backyard BBQ or picnic because it stands up well to the heat so you won't have to worry about keeping it cool while you're off having fun. You gotta love that!!!
