Easy Turkey Meatloaf with Hash Brown Topping

I came up with this recipe for Turkey Meatloaf with Hash Brown Topping on one of those nights where you scour your freezer and fridge to see what you have that will come together as a quick and easy weeknight meal. The results were tasty and blog worthy, even if it’s not the most photogenic meal in the world 🙂

There are so many other things you can do to this dish if you just let your imagination fly. Think about adding some cheese on top of the meatloaf before you add the hash browns. Or what about adding some of those prepackaged French fried onions in with the hash brown topping? What about a thin layer of tomato sauce between the meatloaf and the potatoes? Or maybe mix in some frozen veggies in with the hash browns? Or…well, you get the idea.

This dish freezes well or will hold beautifully in the fridge for several days. I love a recipe where get more than one meal out of it for those busy weeknights when there’s no time to cook, but you still want something tasty and homemade.

Serves: 8-10    Prep Time: 10 minutes      Bake Time: 50 minutes

2 pounds ground turkey
1 medium red onion, chopped
2 tablespoons stone ground mustard
2 tablespoons sweet relish
3 cloves garlic, minced
1 tablespoon dill weed
1 teaspoon salt
1/2 teaspoon pepper
1 large bag frozen hash browns, thawed
Olive oil spray
additional salt and pepper to season the hash browns

-Preheat oven to 350 degrees.
-In a large bowl, mix together the turkey, onion, mustard, relish, garlic, dill, 1 teaspoon salt and 1/2 teaspoon pepper.
-Pat the turkey mixture evenly into a large baking dish and bake for 30 minutes.
-Remove the turkey from the oven and if desired, spoon off some of the juices (I did not do this because I knew the potatoes would absorb the liquid and give them more flavor).
-Spread the thawed has browns evenly on top of the cooked turkey.
-Spray the top of the potatoes with a light spray of olive oil and season with salt and pepper.
-Increase the oven to 425 degrees and return the casserole to the oven to bake for an additional 15-20 or until the top of the potatoes are a lovely golden brown.
-Allow to cool for 5-10 minutes and serve.
