- 4 pork chops (bone-in shown, but boneless can be used)
- strawberries (fresh are best but frozen can be used)
- red onion
- cherry tomatoes or whole tomatoes (chopped)
- olive oil
- balsamic vinegar
- honey
- fresh basil
- ground coriander
- salt and pepper

How this recipe came to be:
On my quest to try and cook lighter and healthier meals, I came up with this dinner for grilled pork chops with strawberry relish one night after surveying what I had in my pantry and fridge.
I hope you like it. We sure did.

The balance of flavors in the strawberry relish is something you'll truly enjoy.
The sweetness of the strawberries, the light bite from the red onion, the earthy tartness of the cherry tomatoes, and the gentle kiss from the fresh basil all marry together as the perfect topping for just about any protein, fish included.

What is the proper temperature for cooked pork?
Pork is properly cooked when it reaches an internal temperature of 145-degrees Fahrenheit on an instant-read thermometer.
Will a bone-in pork chop take longer to cook than a boneless pork chop?
Yes, it will, and it's good to be aware of this fact when you're planning your cooking times.
Does a bone-in pork chop have more flavor than a boneless chop?
Yes!! The bone helps to add extra flavor to the meat while cooking.
That's the trade-off for cooking bone-in pork chops. They DO take longer to cook, but they also DO have more flavor.
The same is true with all bone-in proteins vs boneless.
How to make pork chops with strawberry relish:
- Brush the chops on both sides with balsamic vinegar and season with salt and pepper.
- Allow the chops to sit for 30 minutes while preparing the strawberry relish.
- Slice the strawberries and chop the red onion and tomato.
- Place them in a small bowl and add additional balsamic vinegar, honey, ground coriander, salt, and pepper.
- Add the basil and stir gently, and set aside.
- Dry the chops on the sides with paper towels.
- Add the olive oil to a skillet or indoor grill pan and cook until the chops reach the internal temperature reaches 145-degrees Fahrenheit on an instant-read thermometer.
- Allow the chops to sit for 10 minutes (covered) before serving.
- To serve, top the chops with the strawberry relish and garnish with additional fresh basil if desired.

PORK CHOPS WITH STRAWBERRY RELISH
Ingredients
- 4 bone-in pork chops approximately ½" thick (boneless will also work)
- 3 tablespoons balsamic vinegar divided
- 1 pint fresh strawberries hulled and sliced
- 2 ripe tomatoes seeded and chopped. Or 1-pint cherry tomatoes,, halved
- 1 tablespoon honey
- ½ medium red onion chopped (approximately ¼ cup)
- 3 tablespoons fresh basil chopped, plus additional for garnish
- 1½ teaspoon ground coriander seed
- 2 teaspoons olive oil
- 1 teaspoon salt, divided
- ¼ teaspoon black pepper, divided
Instructions
- Brush the chops on both sides with balsamic vinegar and season with salt and pepper.
- Allow the chops to sit for 30 minutes while preparing the strawberry relish.
- Slice the strawberries, and chop the red onion, and tomato.
- Place the strawberry mixture in a medium bowl and add 2 tablespoons balsamic vinegar, honey, ground coriander, and add the remaining salt, and pepper.
- Add the basil and stir gently. Set aside.
- Dry the chops on both sides with paper towels.
- Cook the chops in a skillet or grill pan (indoor or outside) in olive oil until the chops reach the internal temperature reaches 145-degrees Fahrenheit on an instant-read thermometer.
- Remove from the heat and allow to sit for 10 minutes (covered) before serving.
- To serve, top the pork chops with the strawberry relish and garnish with additional fresh basil if desired.
