These super-simple Kid Favorite Pepperoni Pizzadillas taste just like thin crust pepperoni pizza, but they only take minutes to make thanks to store-bought flour tortillas.
These kid-favorite Pepperoni Pizzadillas are more of a method than a recipe. As long as you have flour tortillas, some pizza sauce and your favorite pizza toppings, you can whip together a pizzadilla in only a matter of minutes.
That's what makes pizzadillas perfect for anyone who hates to cook, any bachelor who's not all that comfortable in the kitchen, or any busy mom who has her hands full with hungry kids at lunchtime during the busy summer months.
I made mine with some sauteed green pepper and onion, lots of shredded mozzarella cheese and some turkey pepperoni. The recipe that follows reflects that. However, feel free to play with your favorite flavors and toppings. What I've done here is only a suggestion. *Note - If you decide to use sausage or ground meat, make sure you cook them thoroughly before assembling your pizzadillas. This can be done well in advance of assembling your pizzadillas and stored in the fridge until ready.
PEPPERONI PIZZADILLAS {PRINT THIS RECIPE}
Prep Time: 2 minutes
10" flour tortillas (one per pizzadilla)
1 tablespoon canola oil
1 green onion, chopped
1 sweet onion, chopped
2 cloves garlic, minced
tomato sauce
dried basil
dried oregano
mozzarella cheese
turkey pepperoni
olive oil spray
-If using the green pepper and onion, sautee them in a medium skillet with 1 tablespoon of canola oil until just softened. Add the garlic and continue to cook for 2-3 minutes. Cool and set aside.
-Place your chosen toppings on half of a flour tortilla, making sure the sauce goes on first and the cheese goes on last, because as the cheese melts it will work as glue that will hold the pizzadilla together. Sprinkle the fillings with a bit of dried basil and oregano to taste. Fold the other half of the tortilla over the fillings, and spray the top of the tortilla with a light spray of olive oil.
-Heat a large skillet over medium heat. Place the olive oil side of the pizzadilla down in the skillet. Spray the now top of the pizzadilla with another light spray of olive oil. Cover the skillet and cook the pizzadilla for approximately 2 minutes. Uncover and use a spatula to carefully flip the pizzadilla in the skillet.
-Cover again and cook the second side for an additional 2 minutes. Remove from the skillet. Cool slightly and cut into 3 wedges to serve.
-Continue the same steps to make as many pizzadillas as you require. *Note - if making many at one time, keep the finished pizzadillas on a baking sheet in a warm (300 degree) oven, with a square of parchment paper between each one to keep them from sticking together, and to keep them warm until serving.
Serve with additional tomato sauce for dipping (if desired) and enjoy!
