    Everything Green Bean Fries

    For the green bean fries:

    • fresh green beans, cleaned and trimmed (optional)
    • eggs, or egg whites only
    • salt and pepper
    • instant potato flakes
    • everything seasoning (homemade or store-bought)
    • cayenne pepper

    For the orange dipping sauce:

    • orange zest
    • Dijon mustard
    • mayonnaise
    • fresh orange juice
    • honey

    Kitchen tools and equipment needed:

    • colander
    • mixing bowls
    • measuring cups and spoons
    • whisk
    • baking sheets
    • parchment paper
    • citrus zester
    • citrus juicer
    • kitchen timer

    How this recipe came to be:

    I wanted to recreate an appetizer recipe for green bean fries that we'd had at a local Irish pub.

    Even though this recipe tastes nothing like what we'd had at that pub, I dare say that I like these better, and it's all because I used what I already had on hand in my pantry when I thought I had panko crumbs...but didn't!

    As always, necessity is the mother of delicious invention! 🙂

    How to quickly trim green beans:

    The step-by-step photo instructions:

    How to make everything green bean fries:

    • Wash and trim 2 pounds of green beans. Shake dry. Add to a large bowl.
    • Whisk two eggs, salt, and pepper. Add the eggs to the prepared green beans, and stir well to coat.
    • Season the beans with additional salt and pepper, and stir well. Set aside.
    • Preheat oven to 425-degrees F.
    • Add the instant potato flakes, everything seasoning, and cayenne pepper to a medium bowl. Stir well to mix.
    • Pour the potato flake mixture over the prepared green beans and toss well to coat the beans in the potato flakes.
    • Lay the coated beans in an even layer onto two baking sheets that have been lined with parchment paper or foil (optional), and sprinkle additional potato flakes (from the bottom of the bowl) onto the beans, if desired.
    • Roast the beans for 12 minutes in the 425-degree oven. Rotate the baking sheets, and roast again for an additional 12 minutes (24 minutes total).
    • Remove the beans from the oven and cool slightly before serving along with the orange dipping sauce.

    How to make the orange dipping sauce:

    • Stir together the mayonnaise, Dijon mustard, honey, and orange zest in a medium bowl.
    • Chill until ready to serve along with the warm, everything green bean fries.

    Can this method and recipe be used for other vegetables?

    Sure thing!

    Try it on fresh asparagus, sugar snap peas, sliced onion strings, radish slices, quartered baby potatoes, or any other veggie you'd like to experiment with.

    Just make sure that the vegetables you use are in small enough pieces that they won't take forever to cook, and so the instant potato flakes don't burn before the veggies are done.

    Ingredients
      

    For the green bean fries:

    • 2 pounds fresh green beans washed and trimmed

    • 1½ teaspoon salt
    • ¾ teaspoon black pepper
    • 2 cups instant potato flakes
    • ¼ cup everything seasoning
    • 1 teaspoon cayenne pepper

    For the orange honey dipping sauce:

    • ½ cup mayonnaise
    • 1 teaspoon fresh orange zest
    • 1 tablespoon Dijon mustard
    • 1 tablespoon honey
    • 1 tablespoon fresh orange juice

    Instructions
     

    To make the green bean fries:
