How long does this recipe take from start to finish?
Approximately 3 hours, so please plan accordingly.
However, roughly 2 of those hours are hands-off proofing time where the yeast does its thing, and 40 minutes of that total time is bake-time when the oven takes over.
How important is the baking soda in this recipe?
VERY!
It's the baking soda that causes the bubbles in the bread, making it a critical step for getting all those wonderful nooks and crannies everyone loves, so don't leave it out!
Can this Everything English Muffin Bread be frozen after baking?
Yep! This bread freezes wonderfully well.
Wrap it well in plastic wrap (either sliced or in loaf form) and freeze it for up to 3 months.
Can the caraway seed be left out of the everything seasoning blend?
Sure thing!
Feel free to adjust the number of spices or omit some entirely if you're not a fan.
I'm all about adjusting recipes to make them your own according to your tastes, preferences, and what you have on hand.
Can store-bought everything seasoning be used in this recipe?
Sure. Find a good one you love and then go for it.
That said, I urge you to make your own.
Not only is Homemade Everything Bagel Seasoning Blend delicious, but it's also much cheaper than purchasing the ready-made spice blend at the supermarket.
Also, it takes only minutes to make, and it stores very well in an air-tight container in the pantry.
How many loaves of English muffin bread does this recipe make?
It makes two wonderfully delicious loaves that are perfect for slicing and toasting!

The step-by-step photo instructions:
- Prepare the loaf pans by spraying with olive oil spray and then sprinkle cornmeal on both pans' bottom and sides. Set aside.
- In a small bowl, add active dry yeast to warm water (110-115-degrees on an instant-read thermometer).
- Whisk in granulated sugar. Allow the mixture to sit and get foamy for at least 10 minutes. *Note - if the mixture does not get foamy, the yeast is no longer active and won't make good bread.
- In a large bowl, measure out the flour, salt, and the everything seasoning.
- Whisk to combine.
- In a small bowl, warm the milk (110-115-degrees on an instant-read thermometer), add it to the flour and stir lightly to combine.
- Stir the foamy yeast mixture into the flour mixture until well incorporated. Be aware this will be a wet and sticky dough.
- Cover the bowl with plastic wrap and allow the dough to proof and double in bulk in a warm draft-free spot for approximately 1 hour.
- Once the dough has doubled in bulk, stir together the baking soda and water.
- Use a wooden spoon to stir the baking soda and water mixture thoroughly through the dough.
- Evenly divide the dough between the two prepared loaf pans and sprinkle with the remaining everything seasoning.
- Allow the dough to rest and rise again for 45-50 minutes, but know that it will not double, but it will increase in bulk.
- After the dough has risen, preheat the oven to 350-degrees Fahrenheit and bake the Everything English Muffin Bread for 40-45 minutes, or until the loaves are deeply golden brown and sound hollow when tapped.
- Allow the loaves to cool on a cooling rack for 30 minutes, and then remove from the pans.
- Cool completely before slicing.

This bread looks so good. Can the dough be made in a bread machine and finished in the oven?

Hi, Patti.
Because this is such a wet sticky dough that doesn't require kneading, a bread machine probably isn't the best option.
This dough is super simple to mix in a large bowl with a wooden spoon with no heavy equipment needed.
However, if you'd like to try the bread machine (if there is a mix setting), by all means, go for it and let me know how it worked out for you. I'd love to hear.
