Fresh and crispy. This chilled no-cook raw carrot and snow pea salad is the perfect side dish for any meal with its bright flavors, colors, and wonderful texture.

Add the shredded carrots, prepared snow peas, chopped scallions, salt and pepper to a large bowl. Toss to combine.Set aside.
To make the dressing:
Add the peanut butter, brown sugar, lime juice, and vinegar to a medium-size microwave-safe bowl. Microwave on high for 45-50 seconds to loosen the peanut butter for easier stirring.
Stir (or whisk) the oil, lime zest, ground coriander, soy sauce and water (see note below) into the peanut butter mixture until creamy and pourable. *Note - you may add more or less water to the peanut butter mixture depending on how thick (or thin) you prefer the consistency of the dressing.
Pour the dressing over the carrots, snow peas, and scallions and stir well to combine.
Cover and refrigerate for at least 4 hours before serving.
Drizzle the salad with honey and top with additional scallions and chopped peanuts (optional) before serving. Best serve chilled.

Store in an airtight container in the refrigerator for up to 7 days.Best served chilled.Not recommended for freezing.
