Heart Healthy Avocado Mango Salad With Lime Poppy Seed Vinaigrette is a brightly flavored and satisfying salad. It makes a delicious dinner all by itself. Or for some added protein add a little cooked chicken breast or turkey. Your call. Your salad.
One of the things I love best about being a food blogger is it keeps me from falling into the trap of cooking the same things over and over and over. Since I like to keep things fresh with a good bit of variety here at Kudos Kitchen, I’m constantly trying to come up with new and exciting recipes that I think will be a hit with my family, as well as yours. This Avocado Mango Salad is just the ticket!
My husband is primarily a meat and potatoes man. Much to his chagrin, I don’t make a lot of meat and potato dinners, but trust me when I tell you he’s not complaining or suffering! I think he likes the variety on the dinner table as much as I do. However, when I served this salad without any meat, he looked around and asked what else was for dinner? HaHa. Surprise! Not tonight, honey! How about you give this Avocado Mango Salad a try and then you tell me what you think…
I’m happy to report my husband LOVED this salad. He honestly couldn’t stop raving about it that night at dinner, and the next day he was excited to take some of the leftovers to work for lunch. As you can tell by the video, our dog Nutmeg wasn’t as big of a fan. Just kidding. She didn’t actually have any of the salad, but I thought it would be funny to have her in the video as a cameo performer because she’s a little rounder in shape because she needs to be on medication due to her having mast cell cancer. Too much information for a recipe post? Probably. But at least I get to video highlight our baby girl in a funny way, as well as focus your attention on this delicious and nutritious salad!
But I digress. Let’s get back to the Heart Healthy Avocado Mango Salad with Lime Poppy Seed Vinaigrette…
The items you’ll need from the market (or your pantry and fridge) to make this salad are as follows: two heads of romaine lettuce, 3-4 limes, olive oil, poppy seeds, honey, shallots, two mango’s, pineapple, blueberries, cucumber, two avocados, and pistachios.
Of course, feel free to omit or change any of these items if you are partial to some and not to others. I’ll never tell, and I’ll never know. It’s your salad, make it however you like and make it however you think your family would enjoy it best!
This Heart Healthy Avocado Mango Salad with Lime Poppy Seed Vinaigrette is perfect for summer. Since the dressing is made with lime and olive oil and no mayonnaise, it can withstand a bit of summer heat without worries. If you’re eating a Whole 50 diet, a raw foods diet, vegetarian, and even Paleo and gluten free, then this is a salad you’re going to want to add to your meal plan.
- For the vinaigrette:
- 1 large shallot, minced
- 3 limes, juiced (about ¼ cup)
- 1 tablespoon honey
- 1 tablespoon poppy seeds
- ¼ cup plus 2 tablespoons olive oil
- For the salad:
- 2 heads of romaine hearts, sliced (about 8 cups)
- 1 cup cucumber, peeled, seeded and diced (1 medium cucumber)
- 1½ cups diced pineapple
- 1½ cups diced mango, peeled and pit removed (approximately 2)
- ½ cup fresh blueberries
- 2 cups diced avocado
- 1 tablespoon fresh lime juice
- ½ salt
- pinch pepper
- ½ cup shelled pistachios
- To make the vinaigrette:
- Whisk all the ingredients in a medium size bowl. Transfer the vinaigrette to a jar with a lid and refrigerate until ready to use.
- To make the salad:
- Add the diced avocado to a medium bowl. Season with salt and pepper and toss with 1 tablespoon lime juice. This will prevent the avocado from browning too quickly.
- Assemble all the ingredients on a large platter in a fashion you find most appealing.
- When ready to serve, drizzle with the lime poppy seed vinaigrette and top with shelled pistachios.
