Cream Cheese Biscuits with Strawberry Butter

I made these particular biscuits for a girlfriend’s breakfast I was invited to a few weeks ago. The theme was a garden party birthday celebration, so I wanted to bring something pink and girly. These Cream Cheese Biscuits with Strawberry Butter were just the right touch to add to the beautifully decorated buffet table.

I’d hemmed and hawed for weeks over what I would bring to the girlfriend’s garden breakfast that I’d been invited to attend. Should I bring muffins? Should I make English muffin bread? What about a big golden loaf of Brioche? I was stumped.

That is until I spotted a copy of “Cook’s Country” magazine that I had sitting on the sideboard cabinet in my kitchen, that just so happened to feature Fluffy Cream Cheese Biscuits on the cover. Bingo! I knew in a flash that that’s what I would bring. My mind then went immediately to serving them with a delicious strawberry butter, and the thing that would make them pretty in pink and party perfect!

Light and airy Cream Cheese Biscuits with Strawberry Butter are the perfect things to make any weekend breakfast just a little more special.

Ingredients
  • 4 ounces cream cheese, cut into cubes
  • 4 tablespoons butter, cut into cubes
  • 1½ cup all-purpose flour, plus additional for patting out the dough
  • 1½ cups cake flour
  • 1 tablespoon granulated sugar
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 1 cup buttermilk
  • 1 stick butter, softened to room temperature
  • 7-8 large strawberries, hulled and diced
Tools and equipment
  • Chef’s knife (for cubing the cream cheese and butter)
  • Paring knife (for dicing the strawberries)
  • Large bowl
  • Food processor
  • Wooden spoon or Spatula
  • Aluminum foil or paper plate (for the freezing the cream cheese and butter)
  • Measuring cup
  • Dough wheel or pizza cutter (for cutting the dough)
  • Baking sheet
  • Parchment paper (optional)
Instructions
  1. Preheat oven to 450 degrees.
  2. Place the cubed cream cheese and butter in the freezer for 15 minutes while the oven preheats.
  3. Add the all-purpose flour, cake flour, sugar, baking powder, baking soda and salt into a food processor and pulse to combine.
  4. Add the frozen cream cheese and butter and pulse until the mixture resembles coarse crumbs.
  5. Transfer the flour mixture to a large bowl.
  6. Add the buttermilk to the bowl and stir just until the mixture forms a loose dough.
  7. *Note - do not over mix or the biscuits will become tough in texture.
  8. Turn the dough out onto a lightly floured surface and gently pat the into a 8" x 6" rectangle.
  9. Use a dough wheel or pizza wheel to cut the dough into 12 even pieces.
  10. Place the biscuits onto a baking sheet that has been lined with parchment paper (optional).
  11. Bake in a preheated oven for 15 minutes or until the biscuits are golden brown.
  12. Meanwhile, use a hand mixer to blend the softened butter and diced strawberries until smooth and creamy.
  13. Serve the biscuits warm along with the softened strawberry butter.
Notes
These biscuits may be made in advance and frozen before baking.
Place the cut dough onto a baking sheet, and freeze. Wrap tightly until you're ready to thaw and bake them according to the recipe directions.
Strawberry butter would be delicious on grilled fruit, muffins, toast or English muffins.
