    Italian Caprese Cocktail

    All the fresh Italian flavors you love about a Caprese salad are in this delightful delicious Italian Caprese Cocktail. Enjoy one today.

    *Disclaimer - This recipe was originally published in 2011. I'm working hard to update all my older recipes with recipe cards, new photos, and additional recipe information. But, getting to all of them will take time. Please bear with me. In the meantime let me assure you that this recipe is still a winner and one I'm sure you'll be well pleased with when you make it at home.

    Trying to recreate all the great tastes of a Caprese salad into a cocktail seemed like a no-brainer to me. 

    Next time I think I'll add more basil (you add as much as you like) and I forgot to add the olives on the skewers, DUH, but all in all I think it was a winner, and one we'll serve again.

    CAPRESE COCKTAIL      {PRINT THIS RECIPE}


    fresh, chopped basil - 1 tablespoon (or more) - muddled in each glass
    balsamic vinegar - roughly 1 teaspoon per glass
    Grape tomatoes - skewered
    baby mozzarella balls - skewered
    olives (optional) - skewered
    salt and pepper - to taste
    ice
    light rum - to taste - in each glass
    tomato juice -  to top off each cocktail
    stir and sip

    There are no rules in cocktails. Make them to suit your own tastes and have fun with them!  That's what we do. 🙂
