Springtime Asparagus with Seasoned Breadcrumbs

This method of serving asparagus is near and dear to my heart because it’s the way my grandmother used to make it, and it’s the way my dad likes his asparagus served best! That said, I put my own tiny spin to this dish of Grandma’s Springtime Asparagus with Seasoned Breadcrumbs, and I hope she would approve.

My dad, however, probably wouldn’t approve of me spinning my grandma’s recipe because he loves things the way they’ve always been, and doesn’t take kindly to changes in the kitchen (or other peoples cooking, as a matter of fact)!  Sorry dad, but that’s just who I am and what I do. Surely you know that by now! HaHa!

Maybe someday I’ll make this for you, dad, and you can decide for yourself if I took grandma’s recipe too far by adding the onion and lemon. You’d probably say yes (because you tend to be ornery), but I’d beg to differ. LOL

Asparagus with Seasoned Breadcrumbs Recipe

This dish can serve several people without a problem, or it can serve just one (me) who simply adores asparagus and can never seem to get enough! Guess I take after my dad in that respect, but not when it comes to being fearless in the kitchen. That’s where I march to my own drummer!


2 pounds asparagus, trimmed of their woody ends
4 tablespoons olive oil, divided
4 tablespoons butter, divided
salt and pepper to taste
1 cup breadcrumbs (I used store bought but homemade would be excellent)
1 1/2 tablespoons dehydrated minced onions
1/2 tablespoon lemon zest

-In a large sauté pan over medium heat, sauté 1/2 the asparagus in 1 tablespoon olive oil and 1 tablespoon butter until lightly cooked, but still somewhat firm (approximately 2-3 minutes). Season with salt and pepper and stir occasionally.
-Use tongs to remove the asparagus to a serving platter and keep warm.
-Sauté the remaining asparagus the exact same way and remove it to the serving platter once cooked. Keep warm.
-In the same sauté pan, over medium/low heat melt the remaining 2 tablespoons olive oil, 2 tablespoons butter.
-Stir in the breadcrumbs, onions and lemon zest until the consistency of damp sand.
-Spoon the breadcrumbs over the asparagus and serve immediately.

Actually, I think my dad would probably say I’d jumped the shark with his mom’s recipe….

Sorry! That was a pretty poor segue, but sometimes you just have to take your chances and dive right in! LOL
