    Easy Healthy Homemade Avocado Oil Mayonnaise is far superior to any brand you can buy in the store because it's made with healthy avocado monounsaturated fats and no preservatives.

    Making homemade mayo had been on my list of things I wanted to make for a long, long time. Since my husband and I recently started eating a high-healthy-fat, low-carb diet, so now was the time.
    Every homemade mayonnaise recipe I'd seen calls for olive oil and eggs. Not that there's anything wrong with that, but I wanted to bump up the healthy fat quota of my mayonnaise, so I decided to do a mix of avocado oil and olive oil.

    Did you know that avocados are considered one of the healthiest foods you can consume? It's true. They packed with healthy monounsaturated fats; they're naturally nutrient-dense, and they each contain nearly 20 vitamins and minerals. Talk about a superfood!

    To learn more about the health benefits of avocados, all it takes is a quick internet search, and you'll be blown away by what you find. Even though avocados are high in calories, they're the calories your internal organs, and your brain require to keep in tip top condition. We've all heard the saying, "An apple a day keeps the doctor away." Well, I think it's high time that saying is rewritten, and the avocado takes its deserved place in the sun.

    HEALTHY HOMEMADE AVOCADO OIL MAYONNAISE   {PRINT THIS RECIPE}
    Yield: 2 cups           Prep Time: 5 minutes

    2 large eggs
    2 limes, juiced
    1 cup avocado oil
    1 cup olive oil
    1 teaspoon salt
    ½ teaspoon black pepper
    1 tablespoon Dijon mustard
    2 cloves garlic, minced
    1 tablespoon apple cider vinegar
    immersion blender, blender or food processor
    glass jar with a lid

    -Place all of the ingredients into a large bowl (if using an immersion blender), or blender or food processor. Blend until the mayonnaise becomes thick and creamy, this will only take a matter or minutes. Spoon the mayonnaise into a glass jar and top with the lid. Refrigerate until ready to use.

    -Use for sandwiches, salads, and as a base for dressings.

    -This mayonnaise will last up to 2 weeks in the fridge.

    *Note - As with all mayonnaise, please make sure not to leave it out at room temperature, or in the outdoor heat for longer than 1 hour. Always serve chilled and always return to the refrigerator after use.

    Homemade Avocado Oil Mayonnaise is especially delicious when slathered on a sandwich made with a few slices of hearty artisan bread. Oh Yeah! Since I'm not eating carbs right now, I'm doing my best to stay away from the bread of any kind...but a girl can dream, can't she?

      Avocado oil has been readily available in my local market for the past year or so, Katrina. Before that, I had to buy it in speciality stores, or on the internet. It's well worth it though. I use it in dressings too. SO good!

      I'm going to have to break down (been wanting to anyway) and get some avocado oil. I don't eat store bought mayo anymore and never take the time to make homemade. Well, except I did once and didn't follow a recipe, tried some different things with a few recipes and it did not turn out well. Need to give it another try and stick with a recipe. 😉
