    What I wrote about this recipe in 2013

    I've been using raw cashews a lot lately. I like to grind them up in my smoothies, add them into my yogurt in the morning, and eat them by the handful at times when I want something quick and nutritious but don't feel like taking the time to make something.

    Raw cashews may take a little getting used to, especially if you're familiar with (and love) the salted, roasted kind that comes in jars and cans. But stick with me here. I just know you're going to love this recipe!

    My nut addiction:

    Cashews are the nuts I always pick out from a bowl of mixed nuts...and next is the pecans.

    You don't want me to sit next to a container of mixed nuts at a party because whoever comes after me won't have the option of choosing cashews or pecans, because I've already eaten them. Yes, I'm one of those annoying people, and as much as I try, I can't seem to help myself.

    Maybe now that I've confessed my problem in public, I can get some help. Maybe.

    What are the health benefits of raw cashews?

    • Raw cashews are packed with vitamins, minerals, and antioxidants.
    • Included are, vitamins E, K, and B6, along with minerals zinc, copper, magnesium, iron, phosphorus, and folic acid. 
    • Eating raw cashews may reduce the risk of cardiovascular disease by reducing blood pressure and cholesterol levels.
    • The copper and iron found in cashews work in tandem to build stronger red blood cells which help the body function properly.
    • Raw cashews are also good for eye health because they contain the antioxidants lutein and zeaxanthin.
    • They can also help to fight cataracts.

    How do raw cashews taste?

    If you've never eaten raw cashews, you'll find you'll love their mellow flavor just as much as the roasted, salted kind.

    They may take a little getting used to (especially if you love the roasted salted variety), but once you learn to appreciate their all-natural flavor, you'll be hooked.

    Can the peanuts be omitted from this recipe, or substituted?

    Sure! You can tailor this nut butter to your own particular taste preferences.

    Below are some alternate nut suggestions you may want to try.

    Macadamia Nuts, Filberts, Pine Nuts, Hazel Nuts, Pecans, Sunflower Seeds, Pumpkin Seeds, Sesame Seeds

    Can other oils be used for this recipe?

    Yes.

    I recommend using avocado oil which is heart healthy and is also neutral flavored.

    How to store homemade cashew butter

    If you live in a hot, humid climate store your nut butter in an airtight glass jar or container in the refrigerator for up to 3 months.

    If you live in a moderate climate, store your nut butter in a cool, dark pantry or cabinet for 1 month.

    However, the refrigerator is the way to go for extended freshness in either climate.

    Can roasted and salted cashews be used instead of raw cashews?

    Yes, but before adding any additional salt, do a quick taste test so your final nut butter isn't overly salty.

    • 2 cups raw cashews
    • 1 cup peanuts roasted and lightly salted
    • 1 tablespoon raw honey
    • 1 teaspoon coarse salt or to taste
    • 1 tablespoon macadamia oil or avocado oil

    • Place all ingredients into a high-speed blender or a food processor and blend until smooth and creamy.
      *Note - If you like your nut butter creamier, feel free to add a little more oil.

    Store in an airtight container or a glass jar in a dark cabinet or pantry for up to 1 month.
    Store in an airtight container or glass jar in the refrigerator for up to 3 months. Microwave on low power to loosen and stir before serving.
