The fresh flavor of this Grilled Skirt Steak with Cilantro Pesto is what summer BBQs should taste like.
*Disclaimer - This recipe was originally published in 2013. I'm working hard to update all my older recipes with recipe cards, new photos, and additional recipe information. But, getting to all of them will take time. Please bear with me. In the meantime let me assure you that this recipe is still a winner and one I'm sure you'll be well pleased with when you make it at home.
With an early overabundance of cilantro out of our garden this year, I decided to make cilantro pesto.
Once made, I wasn't sure exactly what I was going to use it for (or on) but knew that whatever I decided upon, it would be delicious! I happen to live in the cilantro "love" camp and fortunately for me so does the rest of my family.
The next day after making my pesto I was at the grocery store and I spotted some lovely skirt steak. I immediately knew that it, and my cilantro pesto, would be a superhero match made in heaven!
This recipe is super simple to make and is packed with the bright, bold flavor of cilantro and topped with the cool creaminess of my Kudos Kitchen guacamole (but store-bought, or your own recipe will work just as well).
GRILLED SKIRT STEAK WITH CILANTRO PESTO {PRINT THIS RECIPE}
2 skirt steaks (approximately 1 pound each)
¼ cup apple cider vinegar (divided)
1 cup cilantro pesto (divided)
Salt and Pepper
8-10 flour tortillas
guacamole (if desired)
To make the cilantro pesto:
3 cups fresh cilantro, the juice from 1 lime, ¼ - ½ cup olive oil, ½ teaspoon salt, ¼ teaspoon pepper. Blend until creamy. Add more oil if you like a thinner consistency.
-On a foil-lined baking sheet, lay out the skirt steaks.
-Drizzle each side of each steak with some apple cider vinegar.
-Season each side of each steak with salt and pepper to taste.
-Using the back of a spoon, slather each side of each steak liberally with the cilantro pesto.
-Allow the steaks to sit and marinate in the fridge for at least 30 minutes.
-Heat grill to medium-high.
-Remove the steaks from the fridge approximately 10 minutes before you're ready to grill them.
-Place the steaks on the grill and cook them for about 7-10 minutes on the first side.
-Turn them over and continue to grill for an additional 5-6 minutes.
-Remove the steaks from the grill and cover to keep warm for about 10 minutes.
-Slice the steaks across the grain.
-Place the sliced cilantro steaks on a flour tortilla and top with guacamole.
-Serve and enjoy!
