Bacon Cheeseburger Soup Recipe

Who doesn’t love a big bowl of hot and hearty soup when the weather is cold and dreary outside? This recipe for Bacon Cheeseburger Soup is easy to prepare, loaded with all the flavors you love on a cheeseburger (did someone say bacon), and is stick to your ribs, hearty!

Serves 6-8     Prep Time: 20 minutes     Cook Time: 30 minutes

1/2 pound bacon, cut into 1″ pieces
3 small Idaho potatoes,  diced into 1″ pieces (I didn’t peel mine but you can if you wish)
1 pound ground beef
2 cloves garlic, minced
1 medium carrot, peeled and diced into 1″ pieces
1/2 teaspoon salt
1/4 teaspoon black pepper
3 cups low-sodium beef broth
1 can cheddar cheese soup
1/4 cup ketchup
2 tablespoons yellow mustard
3 heaping tablespoons of sweet relish

1/2 cup shredded cheddar cheese plus more for garnish

-In a large stock pot over medium/high heat, cook the bacon together with the potatoes until the bacon is slightly crispy and the potatoes are soft and caramelized.
-Add in the ground beef, carrots and garlic and cook until the meat has browned and the carrots have softened slightly.
-Season with the salt and pepper.
-Lower the heat to medium/low and stir in the ketchup, mustard and sweet relish.
-Add in the beef broth, cheddar cheese soup and stir well to combine.
-Simmer over medium/low heat for approximately 25 minutes and then stir in the 1/2 cup of shredded cheese.
-When ready to serve, ladle the soup into bowls and garnish with additional shredded cheddar cheese.
