It's coming! Cinco de Mayo is coming!!
Are you ready? Do you celebrate the 5th of May? Do you enjoy margaritas?
If you've answered yes to any one of these questions, I have a fantastic prize for you. It's a blender full of Frozen Mango Strawberry Margaritas to enjoy all by yourself...or you can share. The choice is yours.
However, because Cinco de Mayo falls on a Monday this year, might I suggest that you share this recipe with some of your friends. After all, Tuesday might be a whole lot friendlier to you if you've not finished off an entire blender of Frozen Mango Strawberry Margaritas the night before all by yourself. LOL. Just sayin'
FROZEN MANGO STRAWBERRY MARGARITA'S
Makes: 4 - 12 ounce margaritas
5 cups frozen mango chunks
6-7 large strawberries, hulls removed
2 tablespoons lime juice (1 large lime)
1 cup coconut water
1 cup tequila
2 cups ice
kosher salt for the glasses, if desired
-Place all the ingredients in a blender and blend until smooth.
-Rim the glasses with lime juice and salt and fill to the brim with the margaritas.
-Garnish with mango, lime wedge and strawberry on a skewer if desired.
