    Peanut Butter Banana Bread

    Kick up your banana bread recipe by adding some peanut butter and honey roasted peanuts into the mix! The flavor of this peanut butter banana bread will drive you nuts!

    Are you bored with your same old banana bread recipe? If so, this new twist livens up your old loaf.

    Peanut butter banana bread was inspired by Elvis Presley himself!  LOL!! Not really.  I just remember that Elvis was a huge fan of fried peanut butter and banana sandwiches.


    Truth be told, this recipe was more inspired by little old me, who is a wild-eyed peanut butter-aholic!

     PEANUT BUTTER BANANA BREAD     {PRINT THIS RECIPE}

    4 over-ripe bananas, mashed
    2 eggs
    1 ¼ cup brown sugar
    ½ cup softened butter (plus a little more to butter the pan)
    1 ¼ cup creamy peanut butter
    1 teaspoon vanilla
    1 teaspoon coconut extract
    1 teaspoon salt
    1 ½ teaspoon baking soda
    1 ½ cup honey roasted peanuts, chopped
    2 cups all-purpose flour (plus 1 tablespoon for the pan)

    -Preheat the oven to 350 degrees
    -In a large bowl, whisk the mashed bananas, eggs, and brown sugar.
    -Add in the butter, peanut butter, vanilla, and coconut extract. Continue whisking until well combined.
    -Switch to a wooden spoon and stir in the flour, baking soda, and salt. Mix well.
    -Add the chopped peanuts and stir well to combine.
    -Butter and flour a large loaf pan and spoon the batter evenly into the prepared pan.
    -Bake for approximately 1 hour or until a toothpick inserted into the center comes out clean.
    -Cool on a wire rack for at least 45 minutes.
    -Slice and Enjoy!

      When I saw the title in my reader I was assuming that you just added peanut butter to your banana bread recipe. Silly me!!! I should know you better by now and should have know that the brown sugar, coconut extract and honey roasted peanuts in addition to the peanut butter is what takes your old banana bread and transforms it into something over the top delicious.
