Peantu Butter Banana Bread Recipe

Are you bored with your same old banana bread recipe? If so, I have a new twist to liven up your old loaf and it was inspired by Elvis Presley himself!  LOL!! Not really.  I just remember that Elvis was a huge fan of fried peanut butter and banana sandwiches.

Truth be told, this recipe was more inspired by little old me, who is a wild-eyed peanut butter-aholic (I’ve been known to eat it with a spoon butter knife straight out of the jar). Is that so wrong???


4 over-ripe bananas, mashed
2 eggs
1 1/4 cup brown sugar
1/2 cup softened butter (plus a little more to butter the pan)
1 1/4 cup creamy peanut butter
1 teaspoon vanilla
1 teaspoon coconut extract
1 teaspoon salt
1 1/2 teaspoon baking soda
1 1/2 cup honey roasted peanuts, chopped
2 cups all purpose flour (plus 1 tablespoon for the pan)

-Preheat oven to 350 degrees
-In a large bowl, whisk the mashed bananas, eggs and the brown sugar.
-Add in the butter, peanut butter, vanilla and coconut extract. Continue whisking until well combined.
-Switch to a wooden spoon and stir in the flour, baking soda and salt. Mix well.
-Add the chopped peanuts and stir well to combine.
-Butter and flour a large loaf pan and spoon the batter evenly into the prepared pan.
-Bake for approximately 1 hour or until a toothpick inserted into the center comes out clean.
-Cool on a wire rack for at least 45 minutes.
-Slice and Enjoy!

  2. Peanut butter and banana's are a perfect match, the loaf looks so moist and I can just imagine how good it tastes, Beautiful!

  3. When I saw the title in my reader I was assuming that you just added peanut butter to your banana bread recipe. Silly me!!! I should know you better by now and should have know that the brown sugar, coconut extract and honey roasted peanuts in addition to the peanut butter is what takes your old banana bread and transforms it into something over the top delicious.
