This Chicken and Egg Sandwich was inspired by those burgers with a fried egg on top. It may seem a little odd at first, but after your first bite, you'll agree...It's cluckin' good!
*Disclaimer - This recipe was originally published in 2013. I'm working hard to update all my older recipes with recipe cards, new photos, and additional recipe information. But, getting to all of them will take time. Please bear with me. In the meantime let me assure you that this recipe is still a winner and one I'm sure you'll be well pleased with when you make it at home.
I think I've gone over the edge with this one but if loving you is wrong, I don't want to be right!
WHAT THE CLUCK CHICKEN SANDWICHES {PRINT THIS RECIPE}
Prep time and assembly: 25 minutes Bake time: 30 minutes Serves: 8
8 boneless, skinless chicken thighs
¾ cup light mayonnaise
2 tablespoons whole-grain mustard
2 cloves garlic, minced
salt, and pepper
8 slices of bacon, cooked and drained (more if desired)
8 slices of sharp cheddar cheese
8 fried eggs, cooked to your liking.
16 slices of Texas toast
-In a small bowl mix together the mayonnaise, mustard, and garlic.
-Slather each thigh with the mayo and mustard mixture and sprinkle each thigh with salt and pepper.
-Place each thigh on a prepared baking sheet. *Note ~ I prepare my baking sheets by lining them with foil (optional) and spraying them with cooking spray.
-Bake the thighs in a preheated 375-degree oven for 25 minutes.
-Meanwhile, place the bacon in a single layer on another prepared baking sheet and bake in the oven along with the chicken until crisp (approximately 12-15 minutes). Remove and place the bacon on paper towels to drain.
-Remove the chicken from the oven when cooked through and set it aside while you prepare the Texas toast.
-On a third prepared baking sheet lay out the Texas toast on a single layer and bake at 375 degrees until the toast is nicely browned.
-To assemble the sandwiches place a piece of Texas toast (browned side down) on a prepared baking sheet. Top the toast with a single slice of cheese, a seasoned chicken thigh, a slice of bacon, and the fried egg, and top with an additional slice of the Texas toast (browned side up).
-Slice and serve.

Now that is a great sandwich and love the idea of the Texas Toast
