Out of the corner of my eye I spotted something in the frozen foods case at Costco that instantly made my head spin with inspiration and excitement! The next thing I knew I was happily whipping up these Frozen Chocolate Dipped Pineapple Pops at home in my kitchen, and I'm totally anxious to share them with you today!

These Frozen Chocolate Dipped Pineapple Pops are super simple to assemble and require only 4 ingredients to make. With the kid's summer vacation looming and hungry, snacking mouths to feed, these will be the perfect treat that is sure to please all those hungry kids. Plus, they're a fun and healthy snack that are perfect for a hot, summer afternoon.

Or, if you're planning on throwing a luau this summer, keep these in mind as I know they'll be a huge hit at your party!!!


FROZEN CHOCOLATE DIPPED PINEAPPLE POPS   {PRINT THIS RECIPE}
Makes: 24 pops    Prep Time: 30 minutes (including freeze time)

1 pineapple, skinned and cored
1 1/2 cups semi-sweet chocolate chips
1 tablespoon coconut oil
1 cup sweetened coconut
Parchment paper or wax paper to line the baking sheet
5" sucker sticks or wooden Popsicle sticks

-Cut the cored pineapple into 1" rings and then cut each ring into quarters.
-Dry the pineapple pieces with paper towels and push about 1" of the sticks into one side the pineapple pieces.
-Place the baking sheet with the pineapple pop pieces into the freezer for about 10-15 minutes.
-Meanwhile place the coconut in an even layer on a baking sheet and toast for about 5-7 minutes (or until browned) in a 375 degree oven, making sure to watch it carefully so it does not burn. Remove and cool.  
-Place the toasted coconut in a small bowl.
-In a small microwave safe bowl, melt the chocolate and the coconut oil for 1-2 minutes on medium power, stirring occasionally.
-Remove the pineapple from the freezer and dip the pineapple into the melted chocolate and then sprinkle the coconut over the melted chocolate on all sides. Place the dipped pineapple back on the baking sheet and repeat the process with the remaining pineapple pops.
-Return the chocolate dipped pineapple pops back into the freezer until ready to serve.

I think the best pieces I can come up with to coordinate with this post/recipe are these custom coffee mugs I painted a little while back for a customer who wanted some Hawaiian themed coffee mugs, complete with a tiki bar, a wedding cake and some hula dancers. To this day, they're still some of my favorites :)
