    • cutting board
    • vegetable peeler

    Ingredients
     
     

    • 4 cups store-bought rotisserie chicken skin removed and taken off the bone. Cut into bite-sized pieces.
    • 2 ribs (approximately 1 cup) celery diced
    • 1 medium (approximately ¾ cup) red onion diced
    • ½ large (approximately ½ cup) orange bell pepper diced
    • ½ large (approximately ½ cup) yellow bell pepper diced
    • 1 medium (approximately ¾ cup) gala apple peeled (if desired) and diced
    • 1 medium (approximately 2 teaspoons juice and ¼ teaspoon zest) lime zest and juiced
    • 1 can (4 ounces) fire-roasted chilies
    • 1 teaspoon garlic powder
    • 1 teaspoon ground coriander
    • 1 tablespoon chopped cilantro
    • ¼ cup light mayonnaise
    • ¼ cup plain, low-fat Greek yogurt
    • ¾ teaspoon kosher salt
    • ½ teaspoon fresh cracked black pepper

    Instructions
     

    • Add all the prepared ingredients into a large bowl and stir well to combine.
    • Cover and refrigerate at least 1 hour to chill.

    Notes

    Store in an airtight container in the refrigerator for up to 5 days.
    May be frozen. Store in an airtight freezer container . Label and date. Freeze for up to 6 weeks. Thaw in the refrigerator overnight.
