    Rainbow Chicken Salad

    Rainbow Chicken Salad is healthy and delicious! Chock full of so many of Mother Nature's wonderful ingredients, this is a chicken salad you can feel good about eating!

    Rainbow Chicken Salad Recipe

    *Disclaimer - This recipe was originally published in 2012. I'm working hard to update all my older recipes with recipe cards, new photos, and additional recipe information. But, getting to all of them will take time. Please bear with me. In the meantime let me assure you that this recipe is still a winner and one I'm sure you'll be well pleased with when you make it at home.

    I know we're all familiar with the term "Eat The Rainbow" when it comes to health and nutrition lately. 

    This recipe is for rainbow chicken salad cool, refreshing and it's super tasty. 

    That's not to say the other chicken salads aren't good, they are.  It's just that when you're looking for a little healthier alternative, you might want to give mine a try.

    Not to mention that it's lower in calories and fat than other chicken salads I've run across over the years. 


    RAINBOW CHICKEN SALAD      {PRINT THIS RECIPE}

    1 store-bought rotisserie chicken, skin removed and taken off the bone. Cut into bite-sized pieces.
    2 stalks of celery, diced
    1 medium purple onion, diced
    ½ large orange bell pepper, diced
    ½ large yellow bell pepper, diced
    1 gala apple, peeled and diced
    1 lime, zest, and juice
    1 - 4 ounce can of fire-roasted chilies
    1 teaspoon garlic powder
    1 teaspoon ground coriander
    1 tablespoon chopped cilantro
    ¼ cup light mayonnaise
    ¼ cup light Greek yogurt
    ¾ teaspoon kosher salt
    ½ teaspoon fresh cracked black pepper

    -In a large bowl, add all the ingredients and stir to combine well.
    -Taste and adjust with a bit more salt and pepper if needed.
    -Refrigerate until ready to serve.

    There you have it. 

    This quick, crunchy and healthy chicken salad comes together in no time and is enough to make a good 6-8 sandwiches. 

    You can serve this on some toasted whole wheat buns or what about inside some pita bread? Yummy! 

    Or, add a little lettuce and serve this as a salad...
