RAINBOW CHICKEN SALAD
Equipment
- wooden spoon optional
Ingredients
- 4 cups store-bought rotisserie chicken skin removed and taken off the bone. Cut into bite-sized pieces.
- 2 ribs (approximately 1 cup) celery diced
- 1 medium (approximately ¾ cup) red onion diced
- ½ large (approximately ½ cup) orange bell pepper diced
- ½ large (approximately ½ cup) yellow bell pepper diced
- 1 medium (approximately ¾ cup) gala apple peeled (if desired) and diced
- 1 medium (approximately 2 teaspoons juice and ¼ teaspoon zest) lime zest and juiced
- 1 can (4 ounces) fire-roasted chilies
- 1 teaspoon garlic powder
- 1 teaspoon ground coriander
- 1 tablespoon chopped cilantro
- ¼ cup light mayonnaise
- ¼ cup plain, low-fat Greek yogurt
- ¾ teaspoon kosher salt
- ½ teaspoon fresh cracked black pepper
Instructions
- Add all the prepared ingredients into a large bowl and stir well to combine.
- Cover and refrigerate at least 1 hour to chill.
