Rainbow Chicken Salad Recipe

I know we’re all familiar with the term “Eat The Rainbow” when it comes to health and nutrition lately.

This recipe is for rainbow chicken salad cool, refreshing and it’s super tasty.

That’s not to say the other chicken salads aren’t good, they are.  It’s just that when you’re looking for a little healthier alternative, you might want to give mine a try.

Not to mention that it’s lower in calories and fat than other chicken salads I’ve run across over the years.

1 Store-bought rotisserie chicken, skin removed and taken off the bone. Cut into bite-sized pieces.
