    • butter
    • powdered sugar
    • eggs
    • pure vanilla extract
    • all-purpose flour
    • salt
    • baking powder
    • cinnamon
    • granulated sugar
    • sliced almonds

    • hand mixer or stand mixer
    • mixing bowls
    • measuring cups and spoons
    • baking sheets
    • parchment paper
    • pastry brush
    • 3" round cookie cutter
    • rolling pin
    • cooling rack
    • plastic wrap

    Can these easy rolled cookies be frozen?

    YES! They can either be frozen before baking, or after.

    How to freeze the rolled cookies before baking:

    Divide the prepared dough in half and shape each half into a flattened disc of approximately 1" thickness.

    Wrap each disc very well with plastic wrap and store in the freezer for up to 3 months.

    To bake after freezing, thaw the dough and proceed with the recipe as written.

    How to freeze the sand dollar cookies after baking:

    Either wrap them very well with plastic wrap, stacked, or place the cookies in an air-tight freezer container and freeze for up to 6 months.

     

    The easy instructions:

    • Separate the eggs as instructed in the recipe.
    • In a large bowl, cream the butter and sugar.
    • Add the eggs as instructed and blend.
    • Add the dry ingredients and blend until a soft dough forms.
    • Divide the dough in half and wrap with plastic wrap.
    • Chill the dough for at least 30 minutes.
    • Roll the dough to ⅛" thickness and cut with round cookie cutter.
    • Brush the cutout cookies with egg whites.
    • Sprinkle the cookies with cinnamon sugar.
    • Add sliced almonds and bake.

    Ingredients
     
     

    • 1 cup (2 sticks) butter, softened
    • 2 cups powdered sugar
    • 2 large eggs whole
    • 2 eggs separated (reserve the egg whites)
    • 2 teaspoons pure vanilla extract
    • ¼ teaspoon salt
    • 4 cups all-purpose flour plus additional for rolling
    • ½ teaspoon baking powder
    • ½ teaspoon ground cinnamon
    • ½ cup granulated sugar
    • ½ cup sliced almonds
    Get Recipe Ingredients

    Instructions
     

    • In a large bowl, cream the butter and powdered sugar for at least 3 minutes until light and fluffy.
    • Add in the 2 whole eggs, 2 egg yolks, and vanilla. Blend until well combined.
    • Slowly blend in the salt, flour, and baking powder (remember to scrape down the sides of the bowl) until a soft dough forms.
    • Divide the dough in half and wrap each half in plastic wrap.
      Chill the dough for at least 20 minutes.
    • Preheat oven to 350 degrees Fahrenheit (175 Celsius)
    • Roll the chilled dough to approximately ⅛" thickness on a lightly floured surface.
    • Use a 3" round biscuit or cookie cutter to cut circles out of the dough.
    • Place the circles onto parchment-lined baking sheets.
    • Re-roll the dough scraps and continue rolling and cutting circles.
    • Continue the same process with the other half of the frozen dough.
    • In a small bowl, mix the granulated sugar and cinnamon.
    • Use a pastry brush to brush the cut cookies with the beaten reserved egg whites.
    • Place 5-6 almond slices (in a star pattern) on the top of each cookie and liberally sprinkle each cookie with the cinnamon and sugar mixture.
    • Bake the cookies in a preheated oven for 10 minutes.
    • Rotate the cookie sheets and continue baking for an additional 10 minutes.
    • Remove from the oven and cool on a wire rack.

    Notes

    May be frozen after baking. Store in an airtight freezer container or freezer bag for up to 6 months. 
    The dough may be frozen if wrapped well in plastic wrap for up to 4 months. Thaw in the refrigerator and roll and cut as directions indicate.

      You guys went all out! Loved, loved all the details and the theme. The whole pig roast was my favorite and of course those cookies with a flower like look. Very cool!

      What a party! I used to love throwing big parties like that for our friends but since we moved away a few years ago, we just don't have that close circle of folks any more. For me, cleaning up after was always the worst part 🙂 The sand dollar cookies were absolutely perfect for the occasion!
