Honey Dijon Pork Tenderloin

Ingredients
- 2½ - 3 pound pork tenderloin
- 2 tablespoons Dijon Mustard
- 1½ tablespoons honey
- 2 cups breadcrumbs
- 3 tablespoons chopped fresh parsley
- 1 tablespoon fresh lemon zest
- 2 teaspoons coarse salt
- 1 teaspoon black pepper
- 2 teaspoons garlic powder
- 2 tablespoons olive oil
Instructions
- Preheat oven to 350 degrees Fahrenheit
- Dry the pork tenderloin pieces well with paper towel. Set aside.
- In a small bowl stir together the Dijon mustard and honey.
- In a shallow dish, mix together the breadcrumbs, parsley, lemon zest, salt, pepper, and garlic powder.
- Brush the Dijon and honey mixture liberally onto the pork tenderloin.
- Roll and press the honey Dijon coated pork tenderloin into the seasoned breadcrumbs to coat.
- Place each coated tenderloin into a baking dish that has been sprayed with olive oil spray or cooking spray.
- Drizzle the pork with the olive oil.
- Roast in the preheated oven for 40-45 minutes (or until the internal temperature of the pork reads 145 degrees on an instant-read thermometer).
- Remove the pork from the oven and allow to rest for 5-10 minutes before slicing.
