When you're eating a low carb diet, and you're craving guacamole, but not all those carbs found in corn and tortilla chips it's time to break out this homemade guacamole and some no-carb pork rinds for dipping.
Place all the ingredients in a large bowl. Stir thoroughly to combine.
Cover well with plastic wrap directly on top of the guacamole. Refrigerate at least 30 minutes before serving.

This guacamole will keep for only 1 day, covered well with plastic wrap placed directly on top of the guacamole, in the refrigerator.Once it turns brownish in color, it's still edible, but not nearly as appetizing.
