Preheat the oven to 425 degrees Fahrenheit (220 degrees Celsius).
To prepare the bread:
Slice the baguette into ¾ inch diagonal slices and place the slices on a baking sheet. Bake for 10-12 minutes. Remove and cool.
To make the garlic infused olive oil:
Heat the olive oil, garlic cloves, and thyme leaves on medium/high power in the microwave until hot (approximately 60-90 seconds).
To prepare the goats cheese:
Stir together the goat's cheese, 1 teaspoon garlic infused oil, and ⅛ teaspoon of black pepper until well combined.
Brush the toasted baguette slices liberally with the remaining garlic infused oil.
To make the fig jam and honey sauce:
In a small bowl, stir together the fig jam and honey until combined.
To assemble the crostini:
Use a butter knife or offset spatula to spread the prepared goat's cheese onto each toasted baguette slice. Top with a slice of prosciutto and a dollop of fig jam and honey sauce.
Garnish each crostini with fresh thyme and cover loosely. Refrigerate until serving, or serve immediately.
