Melt the butter (at 370 degrees) in the flat tray of an air fryer pan. (Or melt the butter in a nonstick skillet)
Use a pastry brush to spread the melted butter all around the tray and also up the sides of the round egg molds.
Crack the eggs and drop them into the egg molds.
Season with salt and pepper.
Cook at 370-degrees for 3½-4 minutes or until the eggs are set. (Or cook in the skillet until set)
Meanwhile, split and toast the English muffins.
When the eggs are cooked, top one side of an English muffin with a slice of Canadian bacon, a cooked egg, and a slice of American Cheese.
Place the top half of the English muffin onto the egg sandwich and return to the air-fryer for 1 minute to melt the cheese. (Or pop into the microwave for 15-20 seconds)
Serve immediately, or wrap well in parchment paper and refrigerate (or freeze) individually in air-tight containers or zip-top bags.
Notes
Wrap each sandwich well in plastic wrap and cooked sandwiches may be frozen for up to 2 months.To cook after freezing, unwrap the sandwiches and cover loosely with paper towel. Microwave on 50% power until hot. Time will depend on your microwave so check occasionally for doneness.
