For the salad;

3 - 4 cups mixed greens and baby spinach leaves
2 medium-sized blood oranges peeled and sliced
2 cups fresh blueberries
¼ cup thinly sliced red onions
1 ripe avocado pitted and sliced
3 ounces feta cheese crumbled
1 cups chopped pistachios
½ teaspoon salt
¼ teaspoon pepper
½ cup extra virgin olive oil

For the dressing;

¼ cup tangerine balsamic vinegar or your favorite balsamic vinegar
1 tablespoon Dijon mustard
¼ teaspoon poppy seed
¼ teaspoon ground coriander
pinch salt
pinch pepper
½ cup avocado oil

Instructions

Place the greens in the bottom of a large, shallow salad bowl.
Layer the remaining ingredients over the greens.
Place all the dressing ingredients into a jar with a tight-fitting lid and shake vigorously to combine.
Drizzle the dressing over the salad and serve cold.

Notes

Refrigerate any leftover dressing and keep for up to 5 days in the refrigerator.
