Preheat oven to 375 degrees F (190 degrees Celsius).
Place the fillets onto a parchment lined baking sheet.
Drizzle each salmon fillet with a tiny bit of olive oil, and brush the oil over each filet.Season each with salt and pepper.
Place the salmon on the center rack of the preheated oven for and cook for 12 minutes.
Meanwhile, stir the jam and red pepper flakes together in a small bowl.
Remove the partially cooked salmon from the oven. Spoon approximately 1 tablespoon of the jam mixture onto each fillet and brush the jam over each salmon fillet to evenly coat.
Return the fillets back to the oven and cook for an additional 10 minutes, or until the salmon is cooked through and flakes easily with a fork.

Store any leftovers in an airtight container in the refrigerator for up to 5 days.May be frozen after cooking. Store the cooled salmon in an airtight freezer container. Label and date. Freeze for up to 3 months. Thaw in the refrigerator overnight.
