In a medium-size saucepan over medium-high heat, combine all ingredients. Cook, stirring occasionally, for about 25-30 minutes until the sauce reduces and thickens. Set aside to cool, or refrigerate in an airtight container in the refrigerator until ready to use.
To prepare and roast the ribs:
Preheat oven to 425 degrees F (220 degrees C).
Line one or two baking sheets with aluminum foil (optional, for easier cleanup). Place the ribs on the baking sheet and generously brush apple cider vinegar over the top and bottom sides of both slabs and season each (top and bottom) with salt, pepper and garlic powder.Allow the prepared ribs to sit for 30 minutes.
Cook the ribs at 425°F (220 degrees C) for 40-45 minutes. After the initial cook, reduce the oven temperature to 325°F (150 degrees C) and continue cooking for an additional 2-2½ hours. Remove the ribs from the oven and brush the tops sides liberally with the salsa BBQ sauce.
Increase the oven temperature to 350 degrees F (175 degrees C), and return the ribs to the oven to cook for an additional 30 minutes to lightly brown the sauce.The internal temperature of the ribs should reach 195-203 degrees F on an instant read thermometer.

Salsa BBQ sauce may be made in advance and stored in an airtight glass jar in the refrigerator for 7-10 days. Use on chicken, salmon, shrimp, pork, and even beef.Store cooked ribs in an airtight container in the refrigerator for up to 5 days.May be frozen. Store the cooked and cooled ribs in an airtight freezer container. Label and date. Freeze for up to 2 months. Thaw in the refrigerator. Reheat in a moderate oven or air fryer (covered with foil), until hot.
