  • 3 pounds red potatoes cut into 2 inch pieces
  • 3 tablespoons oil I used a canola/olive oil blend
  • teaspoon kosher salt
  • ½ teaspoon pepper
  • 2-3 tablespoons cilantro paste
  • 2-3 tablespoons lemongrass paste
  • 2-3 cloves garlic minced
  • 1 tablespoon fresh lemon zest
  • Tools and equipment:
  • baking sheet
  • large bowl
  • microplane
  • wooden spoon
  • spatula
  • chef's knife
  • cutting board


  • Preheat oven to 425 degrees.
  • Place all of the ingredients in a large bowl, and mix well to combine.
  • Pour the potatoes out onto a baking sheet and roast for 35 minutes in the preheated oven.
  • Remove the potatoes from the baking sheet with a spatula and serve hot with additional lemon zest if desired.
